It is H-O-T! Rather than heat up the kitchen to cook up a heavy meal, why not serve up a cool, refreshing salad for dinner instead? Our weekly menu is full of meal-size salads that are as hearty as they are healthy.

    I wish more of these could be made without the meat. I'm going to try some of these just omitting the meat, and maybe try tofu or seitan with the others.     I enjoy a good tossed salad with iceberg lettuce, cucumber, sweet onion, peppers (green, yellow and red), mushrooms, black olives and cheddar cheese chunks. My downfall is the dressing. I usually use a creamy dressing for flavor knowing I should be using a clear dressing. - 6/16/2012   10:27:28 AM

    I love eating salads in the summer. Lately, I've been using Chef Meg's garlic ginger sauce to marinade tofu and stir frying the tofu. I top my salads with that, shredded carrots, grape tomatoes, and mushrooms. That way I get protein in with my salad.

    The other day I had not brought my lunch like I usually do to work. I wasn't especially hungry so I went to the salad bar at our cafeteria. I loaded it with edamame and chickpeas to get my protein in.

    Some like to put beans in their salads. My uncle Bill made one with taco meat, avocado, kidney beans and a dressing that was salsa, ketchup and taco sauce. The ketchup made it sweet and interesting. He also added Doritos, tomatoes and maybe corn. It was an amazing salad!! I made it a couple times with soy crumbles.....thus making it a veggie all salad.

    Some like tuna in their salads...not for me, but...

    Egg is another idea. Protein. I personally don't like the texture with the lettuce. Chicken and fruit is awesome with some nuts. I don't even need the dressing.

    Houlihan's makes the best chopped salad. It has corn, tomatoes, bacon and I get mine with blue cheese dressing on the side. I think they may put blue cheese in it as well, not sure. I love it and could eat a huge one for my meal and nothing else. YUM.

    Bravo in St. Louis also has one with bacon, feta or Gorgonzola, tomatoes and a great vinegar dressing. Again it could be my meal.

    If you look carefully, there are TWO salads that include meat on the SIDE; that can be omitted. I think SP just did that because it adds protein to a meal. Add nuts or something for your protein. - 6/16/2012   8:28:30 AM

    I agree with HEALTHYLU1... both my husband and I are veg, and I was looking forward to a nice hearty salad that would fill my hubby's belly (and maybe one without fruit in my greens?) Yeah, I know I can just leave out the meat... but it's not the same! Maybe this can be worked on?? Or perhaps just a recipe list for new and different tasting dressings if coming up with a meatless salad is too... challenging.
