More Recipes from Chef Meg

A couple of weeks ago, we introduced you to Chef Meg, SparkPeople's newest resident expert. (Miss that post? Read it here.) You all had wonderful compliments and great suggestions for her.

In addition to the two recipes and videos you saw here on the dailySpark, Chef Meg has plenty of others available on SparkRecipes--and we'll be adding more each week.

We've taken 20 of her made-over and original recipes and compiled them in a downloadable, printable cookbook. And, like everything else on SparkPeople, it's 100% FREE!

Try Chicken and Vegetable Satay, Blueberry-Flax Muffins and Mama's Red Beans and Rice, among others.

She included vegetarian and meat dishes, sweet and savory bites, baked goods and slow cooker meals--with two recipes for the leftovers! Some of these recipes feed a crowd and some feed just a few. I really like the looks of your recipes! Hope there's another ecookbook coming soon! I've tried the Baby Spinach Salad with Strawberries and Toasted Almonds and thought it was the bomb as well a my guest agreed! I lessened the sugar (just a touch too sweet for my taste) and I also added about 1 tsp of poppy seeds to add a touch of flair! Wasn't too crazy with poppy seed addition though, will leave out next time! Am looking forward to more recipes though, keep up the good work and keep them coming! Report

We love Chef Meg's chicken noodle soup that makes extra stock. It's really yummy and has converted my dh into being a soup eater! Report
Is there any chance you have any recipes for picky eaters? I have a house full of picky eaters and they include not liking many vegetables. Any ideas? Report

I personally liked the slow cooker chicken marinara vegetables. It's awesome! My kids thought it had to many chunky vegetables though. I used it as a potato topping with the leftovers. :)

I love healthy foods if it is less cottage cheese (yuckkkk) and more flavor like fresh tomatoes, relishes and vinegar things yuuummmm!!! Report

I have been collecting cookbooks since I was 16 years old. I've given quite a few to my children. But this one sounds so good. I love to download cookbooks. Thanks so much for sharing! Report
I am going to try some of these, especially the chicken provencal and the recipes that use the leftovers. I love those. I am wondering though if you would provide information for subbing in uncooked beans in the recipe. They're cheaper, and it's already cooking for a long time, so it shouldn't be so difficult.

Also, a print option for those of us who don't have or don't want to use all that color ink would be great. It looks beautiful, but the background color gradient is a problem. Report

Thanks you so much! So many great sounding recipes. I especially like the lentil and bulger salad - I've been looking for a good one. I wish though the recipes included carbs and fat since I have to be concerned about them. However, the recipes are so healthy, I don't think it will be a problem for me. Thank you again! Report
Awesome awesome awesome!!!!!!!! I love cookbooks and I downloaded it right away. I am going to print it out and make it into a booklet. I will keep it in the kitchen for easy access and pick a meal for those nights where I just dont know what to make. The Island chicken with pineapple salsa sounds delish. Report

I "leafed" through the recipe book and it looks great! But when I tried to save the PDF file I got a message saying "the end of the file was reached unexpectedly" and it was not saved. I think you have a bug in your PDF.
I'm going to make the Chicken Enchilada Stacker for dinner tonight and I put the Slow cooker Provencal Chicken and Beans on my menu for next week.

Last week my "try something new" dish was Crabmeat and Avocado Quesadillas. DH wasn't sure about it when I told him what it was, but after he gave it a try, he dug right in and said he would like me to make that dish again sometime.

I love trying new, heatlhy recipes. Chef Meg proves that you don't have to sacrifice flavor in order to eat nutritionally sound meals. Report

My daughter and I love cookbooks, so I've saved a copy for us. However, I'm with Go_Robin in that I'm diabetic and would like to see more nutrition information with each recipe. I do know I can go to the Spark Recipes pages to get the full info, but I'm not always that close to a computer when I'm ready to cook. Report
