One of my all time favorite vegetables to cook with is peppers. Peppers are easy to find and affordable. They are also a great source of Folate, Magnesium, Copper, Fiber, Vitamin A, Vitamin C, Vitamin K, Vitamin B6, and Potassium. I enjoy bell peppers so much I buy them in bulk, chop or slice and freeze them. My favorite meals are Sausage and peppers and Tiki Masala chicken (Indian Cuisine.) Report

I like to add bell peppers to casseroles to add more vegetables to any meal. Report
Sauteed peppers (yellow, red, orange - 1 each), red onion and fresh garlic on a whole wheat pizza crust. No sauce. Little Italian seasoning. Cover with roma tomatos. Small amount of mozz and parm cheese. When done, top with some banana peppers and home-made salsa or red pepper (powder) for a little zing. A-maz-ing. Can't do the green peppers tho - rips me up. I taste them for days! Report

I HATE HATE HATE........ bell peppers. For me they ruin any food they come in contact with. I once sent a pizza back that had been cooked with peppers. All they did was pull them off and send us back the same pizza. Not only did I skip that pizza (my dinner) because the oils were all over it, I never went back to that restaurant. I sure wish they tasted good to me, it's a big pain IF I want processed food. Glad I'm trying to eat less processed foods by cooking more food. Report
I stirfry chicken and towards the end, add lots of bell peppers, onions, carrots and cucumbers and serve over hot steaming white rice. Report
