    Guys: if you use canned, RINSE THEM.. that is where most of the sugar is from . I am a certified consultant in nutrition. Plain yogurt works well (like peaches and cream)with peaches and you get some added calcium to boot. A splash of mini chocolate chips over it, will give you an excellent snack.     Red wine, slice fresh peaches into it, add some sugar or splenda or such, leave in fridge a couple of hours, eat. I don't drink the wine, but you could, it will be like a light sangria.     I make peach jam at the end of season, that is seasoned with cinnimon. After several years I have it down pat how to purposely flop a batch and we heat it up and pour it over vanilla ice cream, and it tastes just like peach cobbler pie.     I am so going to have to try out the recipes for the muffins, the salsa and the pancakes - my mouth is watering as I sit here thinking about them! The muffins sound great formy DH (type 2 diabetes).

    My favorite fresh peach recipe: peel, slice, eat. That's the best way to enjoy a fresh peach from the Farmers' Market! My second favorite way is a peach galette that combines peaches and blueberries. And when they finally come in season this year, I'm going to try that method mentioned below, with the feta melted in the center.

    In the early eighties most all canned fruit was in heavy syrup. My daughter, age five, was able to read at the time. We requested that she go to the cellar pantry and bring up a can of peaches.     Why all the canned peach recipes? Even if it's extra light syrup, it's still additional sugar AND the peaches are already super soft. I like a little more texture to my peaches. I'll try some of these, but with fresh peaches. - 7/6/2010   8:27:20 PM
