    The Split Pea & Sweet Potato soup sounds promising. Going to try it with Indian spices instead of the bay leaf. And snow peas are always wonderful!

    I make up a Pea Salad, I thought it was from JoAnna M. Lund's "Healthy Exchanges" cookbook, but I can't find it right now.... It used frozen peas run under water to thaw and add chopped up onion, celery and red pepper., and olives. The dressing was just maio and milk seasoned with sugar sub. to taste.... I love it.

    I LOVE peas. Not those nasty snap pea things or oriental variations. Yech! It is practically impossible to improve on fresh peas with a bit of your favorite butter.     One thing I've learned about split pea soup...DO NOT STIR IT while it's cooking! It will turn into Split Pea Concrete. Let it do its thing, then when you're ready to serve, give it a stir. What looks like green-colored water will turn into a lovely creamy soup. - 3/30/2011   3:15:08 PM
