12 Days of Holiday Cookies: Chewy Molasses Ginger Cookies

At only 50 calories a piece these soft cookies are sure to please! This is another recipe we found through a member.

Ingredients:
  • 1/3 cup butter or margarine, softened
  • 3/4 cup packed brown sugar
  • 1/4 cup dark molasses
  • 1 teaspoon ginger, ground
  • 1 teaspoon cinnamon, ground
  • 1 egg
  • 1 1/2 cups all purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon cinnamon
  • 1/4 cup granulated sugar

    Directions:
    Beat the butter on medium-high speed in a large mixing bowl for 2 minutes.

    Beat in the brown sugar.

    Add the molasses, ginger, and cinnamon, mix thoroughly.

    Add the egg.

    Mix in as much of the flour and wheat flour as you can with the electric mixer. Stir in any remaining by hand.

    Refrigerate for 1 hour.

    Heat oven to 350 degrees Fahrenheit. Spray 3-4 cookie sheets with non-stick cooking spray.

    Shape into 1 inch balls, roll in granulated sugar mixed with cinnamon.

    Place 2 inches apart on prepared baking sheets.

    Bake for 8-12 minutes, until cookies are set and tops crack.

    Yields 4 dozen cookies

      I made them and they are very good - very chewy -- I LIKE that! But I doubled the recipe and STILL only got 4 dozen cookies out of it... to get 48 out of the single recipe they must be about the size of a gumdrop! - 12/11/2010   9:09:52 PM

      These cookies came up so dry that rolling them in the cinnamon sugar didn't work very well. Also, some steps are left out. You need to flatten these balls. I think it definitely needs more liquid, and possibly more spice, like a 1/2 teaspoon of cloves or something along those lines. Not real flavorful. - 12/7/2010   12:55:02 PM
