This Labor Day, take some time off from cooking. I'm enjoying one last day of summer, and I hope you are, too.

Here are some of my favorite easy recipes. Enjoy!












Chef Meg's Spinach-Berry Salad
Strawberries are delicious combined with tender spinach and crunchy toasted almonds.
Chef Meg's "Fried" Cheese Sticks
Fried cheese is one of those foods that's so good and yet so bad for you! Chef Meg cut the grease and used a light string cheese to recreate this pub favorite.
Taco Soup (Chef Meg's Makeover)
Chef Meg cut the sodium on this hearty soup by swapping taco seasoning for three spices you already have on hand. There's a secret ingredient (garbanzo beans) that helps add fiber and thicken our Taco Soup!
Boneless Hot Wings (Chef Meg Approved)
Fried, battered, dripping sauce--hot wings are calorie bombs!
Here, boneless skinless chicken is coated in hot sauce and dredged in breadcrumbs for a tasty game-night appetizer.
Linguine with Spicy Shrimp Sauce (Chef Meg's makeover)

Most pasta salads are heavy on the pasta and light on everything else. This version, which can be served warm or cold, includes a hefty portion of vegetables--both spinach and tomatoes.

I love, love love the chicken Satay with vegetables. It is super yummy and super fresh tasting, although it does take some time to chop all the veggies, and the chicken needs to be marinetaded, but it is very fast to cook once everything is ready. Report
Finally found quinoa in one of the local groceries but it was 8.97. I can't afford that as I'm feeding three grandchildren. Report
The spinach-berry salad looks wonderful. It will probably make an appearance in my home soon. Report
