Slow Cooker Provencal Chicken and Beans

This is a great recipe to use as a basis for plenty of meals! Use your leftovers to make Chef Meg's (Leftover) Chicken Nachos and Chef Meg's (Leftover) Chicken Tostada.
Slow Cooker Pork with Greens and Beans

Chef Meg's kids never complain about eating both beans and greens in one meal when they're served alongside rich, slow-cooked pork. I used pork shoulder, but you could use a leaner cut to save on fat and calories.

Great recipes but not everyone has a slow cooker. Report
Pair beans with corn or a whole grain for a complete protein! Then you don't need the chicken + saves $$ & cholesterol. Can't wait to try the burgers!
It's a little bit sad to me that only 2 out of the 7 recipes here are vegetarian. Especially considering the premise at the beginning of the article being that beans are an economical protein source - why "beef them up" with other protein sources that are less economical if you're trying to highlight how well they serve that purpose? Love beans so always looking for new, interesting ways to serve and eat them. Not a big fan of recipes that call for opening 'a can of...' or 'a jar of...' though - too many unnecessary and unhealthy additives.
