12 Tantalizing Tomato Recipes You Must Try

By , SparkPeople Blogger
All hail the tomato! Not only are they delicious, they're chock full of health-boosting antioxidants, carotenoids, potassium, vitamin A and vitamin C, and could even help reduce the risk of pancreatic cancer, according to WebMD. Plus, you can get your hands on tomatoes all year round.

While you can always just slice a tomato, add a little salt and enjoy, there are plenty of more creative ways to turn this versatile fruit into the star of a satisfying meal.

1. Grilled Okra & Tomato Skewers
Okra and tomatoes make a surprisingly well-suited pair, especially when they're skewered, grilled, drizzled with olive oil and balsamic glaze, and seasoned with pepper and sea salt. Add them to a bed of fresh greens for a succulent summer salad.

One bite of this zesty salad and you'll feel like you could be sitting in a trendy Italian bistro. It's a great way to use up extra bread, along with cucumber, onion, capers and, of course, fresh tomatoes. A blend of seasonings and feta cheese add unique flavor.

4. Herbed Tuna in Tomatoes
Who needs sandwiches when you can serve herbed tuna inside fresh, hollowed-out tomatoes? Prepare these zesty bowls to add a gourmet flair to lunch, or use them as a unique hors d'oeuvre.

5. Avocado Tomato Salad
This light, refreshing salad pairs tangy tomatoes with fresh avocado over a bed of greens, for a versatile dish that can serve as an appetizer or the main event. Did we mention it's vegan?

Yum! Definitely going to make the salad. Report
#1 way - a tomato fresh from your garden sliced with a little salt. YUM

My other favorite is a caprese salad - chopped fresh tomato, chopped fresh basil, chopped fresh mozzarella and a drizzle of balsamic vinegar. Heaven.

I can't wait to start growing fresh tomatoes again.

If you've never had a fresh tomato straight from the garden of a family member or friend, you're really missing out. The flavor is just superb compared to store-bought. Report
Disagree with most posters - these "ideas" sound dreadful Report

These recipes are great, if only you could make them without tomatoes! I will try that. Report

The cover photo is just simple sliced tomatoes, sliced fresh mozzarella, sprinkled with fresh chopped basil, and drizzled with olive oil and balsamic vinegar, a summer time staple when tomatoes ripen! Report

I too would have liked the recipe for the cover photo.

What about the "Mater Sandwich"?I have heard it is the preferred sandwich down in the Southern part of the United States. I have tried it with fresh from the garden tomatoes and it IS delicious! It is a sliced tomato sandwich ~ that you layer tomato-mayo-tomato-mayo between two pieces of bread that have mayo on each bread slice. Report

The first one sounded interesting only I am not even sure I can buy okra where I live. Report

I know that's a stacked caprese on the cover photo, but it seems a little silly not to have included the recipe yet used that picture... Report
I love tomatoes! Thank you for the ideas! Report
Magrobb - that picture looks like a stacked caprese salad. You'll find lots of good recipes for caprese salad if you Google it. It's one of my favorite dishes during tomato season since all it requires is tomatoes, fresh mozzarella, fresh basil, olive oil, salt and pepper. Some people add other stuff, but I like it that way. If you like the picture, you can just stack the tomato and mozzarella slices like they do there. Report

Where's the recipe for the stacked tomato with filling? It looks wonderful, but I can/t tell what's in between the slices. Report

You left out one of my families favorite fresh tomato dish. I boil and drain pasta, add 6 chopped tomatoes, diced fresh basil, salt and pepper, minced garlic and drizzle olive oil and stir together. You can sprinkle fresh parmesan over it before eating. It is good lukewarm but great cold from the fridge. The kids are always snacking on it. Great for hot days. Report
