I'll eat a whole Haas avocado with just a spoon... Makes an excellent small meal for me, discovered them while testing for food allergies. Never had them before and took me a while to figure out how to open it... :). Yes, I now know how simple it is, but I'm kitchen-challenged. I also like an avocado mashed up with 1/4 to 1/2 a fresh lemon (or up to 1 whole line), not just the juice but also the pulp. I just take a knife and dig into the lemon or lime sections with it into a bowl. Good by itself or with bits of pita bread or rice crackers/chips or oat crackers or corn taco shells or plain corn chips. Sometimes I'll just stuff a pita with the concoction, sometimes with onion or other veggies such as red pepper or cucumbers. Also can add a lot of other veggies to the mashed up or cut up avocado,, using the avocado instead of salad dressing. About the only thing I don't eat avocado with is the traditional tomato, since I have to limit those due to allergy and prefer to save them for a my favorite plain tomato sandwich with added salt and egg-free mayonnaise.

Can't believe you left off my fav - chocolate mousse Mash up 1/2 an avocado, add 2 Tablespoons of cocoa powder --- then three alternatives a) 1/4 packet splenda b) 2 tables spoons agava c) fold with a 1/4 cup lite cool whip - chill for 10 minutes in freezer - num! I've made all sort of twists on this added chopped up fresh fruit (cherries with a little almond extract is amazing) or some orange zest. I've used it as an icing for angel food cake.

Another - mash up add lime juice, finely chopped roasted peppers (just under your broiler and use instead of butter on corn on the cob.

THe ideas here are great. I have been using avocado in tuna salad & salmon salad to replace may for some time now. MMMM (you need to adjust to the colour difference in the tuna, but the taste is the best. thanks to MMNEWMAN822 for the link to the avocado GF scone. - good starting point for something I would not have thought o fdoing.. - much like the avocado mashed potatoes...
