    I peel my butternut squash, chop it into bite size pieces and toss it into homemade broth-based soups along with carrots, green beans, onions, celery, etc. If there's extra squash, I steam it, mash it, measure myself a cup, and serve it with a 1/2 tsp butter and a dash of salt and pepper.     I'm very excited about these recipes, especially the soups and the stuffed squashes. I love making soup, and am always looking for new recipes to try.
    In England, where I am, we don't get the whole squash thing so much, but my local Waitrose does sometimes have different squashes in, and as they mostly seem to need initially cooking in the same way, I plan to make some stuffings and freeze them, so that when a suitable squash turns up in the shop I can defrost a suitable stuffing and have a play. :-)

    Great recipes. I love to eat squash as they're a good non-starchy source of carbs.

    One of my favourite recipes is spicy lamb and butternut squash stew. Yummmm.

    We use butternut squash in our curry recipes. First we roast the squash with granny smiths, onions, and cashews. Then we puree it in the food processor. It makes a great curry base. The consistency is on par with a real Indian curry. - 9/22/2010   9:44:31 AM

    We call it - Butternut Pumpkin and its almost a staple food in our household all year round (fresh) It can be used in so many ways - but I think my favourite is roast with fresh herbs sprinkledover and as a side dish - with the skin on!!

    I used to cut them in half, put in butter and brown sugar and bake. But now I'll try to find a healthier way to cook the squash.

    I usually like my squash just plain without anything added to it at all. I also like to add it to soups, it really adds such a good flavor.
