Rhubarb, Delicious, Low Calories, Fibre & Potassium

Spring is the time for rhubarb, it's high in vitamin C, has on average 1g of fibre per stalk, is not bad in the potassium department and tastes good.
Instead of sugar add sweet fruit like pineapple, apple or strawberries. Topped with low fat yogurt and some seeds & you have a tasty and healthy lunch

  • Luv rhubarb also. I make a no sugar rhubarb sauce which is great alone or as a topper on frozen yogurt or ice cream. - by OLYGIRL1
