Carrots help nourish cells that have been starved of nutrients which result in ulcers. Carrot juice is diuretic and helps to eliminate excess fluids from the body so its anti-inflammatory effects do help reduce arthritis, rheumatism, gout and other inflammations. Studies show that adding one carrot per day in our diet significantly reduces cancer risks. Try carrot slaw, matchstick carrots & cottage Cheese, stemed or raw carrots, addon to a salad, carrot soup, endless possibilites!

    I LOVE CARROTS for their color...So I keep a well stocked BASIC SALAD in a clear bowl of leafy greens. I add 1 cup of shredded carrots and 1 cup of shredded red cabbage so that the gorgeous ORANGE COLOR calls me to my "Salad Bucket" whenever I want to fill up on veggies.
