Alternative To Mashed Potato



Mashed parsnip makes a great lower calorie alternative to mashed potato.

Either mix half and half potato and parsnip, or substitute altogther.

  • this is old, but i just saw it...
    my mom always cooked carrots at the same time as the potatoes and then mashed them together... gave an extra bit of nutrition... and she used the water from boiling the potatoes/carrots to make the milk, in case some of the nutrition was lost while boiling this would bring it back - by MALIGAL19
  • I will try this. I cooked parsnips for the first time this week. It was a mashed parsnip and carrot dish. It was ok. The carrots gave it a nice appearance. I will try doing half parsnips and half potatoes next time. I love potatoes. - by PAPAFLEET
