Definitely, roast your vegetables. Roasted Kale chips taste almost like potato chips. You can puree a head of cauliflower with a clove of minced garlic, a tbls of butter, and a tsp of salt. It tastes like mashed potatoes, but so much better for you. Don't worry about the butter. About 4 or 5 people can eat a head of cauliflower, so you really aren't eating that much. Yummy.

The same day I posted that I was going to roast vegetables... well... I did. And it's been great. I made so much that I'm still eating on them and will have enough to eat for at least tomorrow also. The only thing I didn't do was try it with fennel... that'll be next time. I can't wait! Yumm!

Oh yeah - roasted veggies are the best. My favs are cauliflower and butternut squash - cooked the same way everyone here has mentioned... brush on a little garlic/olive oil mixture, pop in the oven, turn occasionally. Yum! I also like grilled sweet potatoes. Spinach salad is a go-to for me and the benefit is extra iron in your diet. I also like to saute spinach and/or green beans with a little garlic.

My whole family loves what we call "burnt Broccoli". Cut or break broccoli into fowerettes. Toss with olive oil and sprinkle with garlic salt (or do what SALTYCHOCOLATE suggests with a garlic oil - I love that idea!). Spread on a sprayed or foiled cookie sheet and broil in oven till the tips of the broccoli are burnt (you can turn it once or twice to get more sides burnt). This sounds crazy, but it is so yummy!

Mmm. roasted root vegetables! Cut up carrots, potatoes, sweet potatoes, beets (trust me, they're great roasted), parsnips. Toss with a little olive oil, salt, pepper and maybe a bit of dried sage. Roast at 350 until tender. MMM. Now, to really make it yummy, add some fennel. Fennel takes on such a different taste when roasted.

One of my favorite afternoon snacks lately has been celery hearts w/ all natural hummus. I get the hummus at Costco by Tribe and they come in great portion control 2oz. 100 calories cups.

I agree with newyou1 - that's the best way for veggies (for me). But you should try fixing your veggies different ways, you may find one that you like raw, but not cooked - or vice versa. I like raw cauliflower, but I LOVE it roasted! I assumed I didn't like brussel sprouts till I found out that my hubby liked them (he never mentioned it to me, so I never thought of cooking them) and now I've discovered I like them. Don't rely on past experience to judge your food now. I hated veggies the way my mom cooked them while growing up, now I love them because I don't overcook them till they're mushy - she likes them that way - YUCK! Try different spices on them, maybe a little quality parmesan cheese. Mrs Dash has alot of different blends to try sprinkling on.
Dang! Now I'm hungry for something green!

I have found the more veggies I eat, the easier is it to take off and keep off the weight. Salads are great. My fav veggies dish is to cut up all sorts of veggies ie: cauliflower, yellow squash, zucchini, onion, eggplant, brussel sprouts, red pepper, yellow pepper and drizzle some thyme & garlic infused olive oil over the veggies. Then I bake in oven on 325 for 10 min. YUM!

Well, I really love my veggies. Have you thought of adding a bit of light salad dressing to them? Another idea is to make a garlic oil - just very finely mince some garlic, add it to some nice extra virgin olive oil, put it in a squeeze bottle and keep it in the refrigerator. You'll need to take it out a few minutes before you add it to the veggies because olive oil thickens in the fridge. But just drizzle some on your veggies with some salt & pepper.

Do you like salad? I perk my salads up with things like grilled chicken breast, dried cranberries and almonds. The only vegetable I don't really care for is peas, and I'm not fond of cooked carrots, but I like them raw. So veggies aren't a problems for me.

how and what for veggies should i be eating. my problem is i really don't like a lot of veggies. fruit i like most of them. the water part is great that is all i drink.
