Too funny over the pancakes! Growing up my mom used to make us corn pancakes! She would just toss a few kernel corns into each pancake and wow it was delicious!

I have been making quiche without crust for many years and yes- leftovers work out perfect in your quiche! I like brocolli in mine as well with melted cheese.

I just read a recipe for a ham and cheese quiche, and a reviewer mentioned she tried making the recipe without a crust (due to gluten intolerance) and it came out well. My first thought was, "Hey, great idea - fewer calories, too!" I was thinking a quiche would be a good way to help use some of the leftover ham from Easter dinner.

Back to pancakes - My husband surprised me over the weekend...I walked into the kitchen Sunday morning to see my Betty Crocker Cookbook open, on the counter, and a skillet on the stove....He was making homemade blueberry pancakes! They turned out very good! Would you believe that was the first time I'd ever eaten blueberry pancakes?!? When my kids were growing up, I used to make either banana pancakes, or chocolate chip pancakes. Now I know blueberry ones are delicious, too.

Wow! So glad we don't have onion allergies!!! We LOVE onions! I use them in everything!

As a matter of fact I am now growing onion seedlings this year and 'beefing' up my chive garden patch as well.

I do need to throw out my taco seasonings! I forgot to clean them out of my cupboard. I have to make special tortillas for tacos because I can't use any store bought ones... I have gluten issues

Bless your heart. I must admit, I don't miss all the snow. We get enough here in Kentucky, LOL!

We deal with a lot of food allergies in our family, so I rarely buy any mixes or convenience foods; the possibility of cross-contamination isn't worth the risk. Fortunately, there are some great recipes on Pinterest - I added a section to the recipes I save there, just for mixes. I like to make my own taco seasoning, meat rubs, etc (because of the onion allergy I mentioned in a previous post).

Pancakes sound good! I need to make some soon.

The weather up here in the North as you well know can be very harsh! This year was a record breaking snow fall.

Kitchen: I gave away my pancake mix with a ton of added ingredients. I will start making my own pancakes from scratch!

BtW: If you throw some Folger's Crystals into a chocolate cake recipe it tastes wonderful like mocha chocolate!

We lived through the 'Ice Storm' of 1998! It was terrible here in the North Country of the Adirondacks! up to 4 inches of ice in some places!

We had over 10 trees that came down around our home and we had to cut them up just to move around our property.... With al least another 10 trees down further away from the house. We spent the whole spring with 4 kids helping just to clean up the mess. We had some hard woods to use to burn in the wood stove, but most of it was brush that we had to burn. That was the storm where I broke my ankle in '3' places trying to walk on the ice to deliver food to the local shelter housing people with out power.....

We had to wait a very long time for the ambulance to come due to down power lines and ice everywhere!!!

We live 1 hour from the border. emoticon

Same here. Hubby was reading aloud the ingredients off one of his flavored coffees this morning - oh my! I think I'll stick with my Folger's decaf, LOL!

Re: winter storms... I lived in New Hampshire (the "North Country") many years ago, way up close to the Canadian border. It was when we had the "Storm of the Century"...that storm actually followed our route up there. This girl from Alabama was wondering what I'd gotten myself into! It was many months later - in May - before we saw what the countryside looked like without snow. I even made a few wrong turns when driving, not recognizing the usual landmarks without being covered in snow.

Living in the Northern Adirondacks and in a secluded place on the side of a mountain, one keeps a huge pantry with ready to eat foods that have a long shelf life.
One winter we went 5 weeks without water but we were prepared and since then we have really prepped our water supply!!! Our pipe to the road has a long distance to go and is always possible for freezing.
Our winters are harsh. But you learn how to be ready for anything... once went 2 weeks with no power, but fortunately we have 2 woodstoves as a back up heat.
We have about 20 flashlights of all kinds, 2 generators, oil lamps, lots of oil, lots of candles, battery operated radios, solar rechargables of all kinds, extra propane tanks for BBQ cooking if necessary(we can also cook on the woodstove) several different types of filtering and boiling water, many extra batteries, etc.
And we still feel as if we can do more!!!
We are so stocked that my kiddos come over once in a while to shop, LOL. emoticon

Our planning-ahead and stocking the pantry sure comes in handy during these winter storms! I've been baking today...trying to have foods on hand that are ready-to-eat and do not require refrigeration or heating-up, just in case we lose electricity.

We do the same... if it ain't broke don't fix or replace it!!!!!!!! And we have toughht our children the same as well.

I usually buy what is on sale and stock up too, especially if I have the coupons for that item

emoticon I, too, like to be well-stocked on food, paper products, etc. I watch for good sales and buy enough to get us through til the next sale. (I once bought 45 cans of tuna, because our local grocery store over-bought and sold it extremely cheap. (It was several cans for $1!) My kids couldn't believe I bought so many cans of tuna, but there were still many cases left, for other people to buy, LOL!
My mother was raised during the Great Depression, and she taught me and my sisters how be good stewards, and she was a firm believer in "Use it up, wear it out, make it do, or do without". emoticon

We have a HUGE pantry with canned goods and powdered stuff... Most of it is healthy foods and goods some I am not worried about that... plus, my kiddos will sometimes come over to grab a thing or two. We all feel comfortable knowing that their is a hefty supply of food incase of economic struggles!

Yes, same here. The dog food/ cat food aisle is just as bad as the detergent aisle. (I avoid both aisles at the grocery store.) Perfume and cologne give me asthma attacks and migraines. Because of this, we were starting to attend church services virtually a few months before the pandemic. Living with asthma and severe allergies is not for sissies, LOL!

Okay, to keep this on topic emoticon we stocked up on a lot of fresh fruits and vegetables today! Hubby did buy a small carton of vanilla ice cream, but we only eat ONE scoop per serving - the last carton lasted several weeks! It keeps us from feeling "deprived" - everything in moderation, right? Haha! We also bought a couple of exercise balls today, for only $5 each - there's hope for us yet.

Oh my goodness! That is a severe allergy! And you knw that people in a restaurant kitchen don't always wipe a knife clean!!!

I have a fragrance allergy to perfumes and soaps and certain oils like essential oils! Which is very hard to control when out in the public! I have to rush through the detergent aisle in the supermarkets so as not to get a reaction. Even strong newspaper ink on freshly printed papers will set me into an attack! I have to keep my inhaler with me at all times.

Good job, cleaning out any "extras". It certainly takes time to weed out the foods that don't belong in our journey to better health.

Onion - It's become a severe allergy; I can't have it in any form. A couple of years ago, I wound up in the ER in anaphylactic shock, simply because I got a sip of my husband's drink after he ate something with onions. Between the pandemic and my severe food allergies, we rarely eat out anymore. It's a good thing I enjoy cooking!

How about using onion salt or powder? Are you allergic to that?

Yesterday I tossed out more junk... it is hard to do! I am slowly coming around to eating better and sticking to it. emoticon

Hahaha! The style and preferences of foods one eats I think depends on how you are raised, cultures, and who you hang out with!

Yes, I grew up in an immigrant Italian family and we ate lentils and beans often!
We did eat meat/ mostly sausages in our lentil soups. But, my fav was an all 'bean' soup with lentils!!!

chopped up cooked ham is delicious also with a lot of garlic in the soup.

Yes, I agree, a small serving of potatoes shouldn't be a "bad" thing.

While cleaning out the pantry last month, I came across a bag of lentils someone had given to us. In an effort to use what we have on hand and not be wasteful, I'm trying new recipes that will help me use this bag of lentils. I made a pot of Lentil Soup that we loved. It was a bigger hit than the Vegan Sloppy Joe recipe I tried last week. (They were edible, but we both prefer meat in Sloppy Joes, LOL!) Do you ever cook with lentils? Any tips or words of wisdom? Neither my husband nor I had ever eaten them til now. (I guess we don't get out much!) emoticon

Yes me too! The rotten potatoes will do well in a compost to use in your garden! Plus, I don't think a potato now and then is all that bad. Yeah they have alot of carbs but it is a good carb nonetheless. You could cook one small potato and share half of it with hubby.

Any way, I have a lot of old pasta that I have been throwing out for the birds!! They love it! LOL

I know what you mean. Groceries aren't cheap! I just had to "let go" of about eight pounds of russet potatoes. We were going to enjoy shredded, barbecued chicken on top of baked potatoes for supper tonight, but in our quest to eat healthier, we haven't been eating potatoes lately. So... when I went to get potatoes out of the potato bin, they were all rotten. Shoo-wee, they stank! I don't think we'll be buying more potatoes any time soon, LOL!
What a waste. I hate wasting food!

Avocados - my husband loves them, but the only time I've liked them was when I ordered a "California Sandwich" at a local deli - delicious!

We bought some red, seedless grapes (called 'Magenta Grapes") this week at Sam's Club - best grapes ever! So sweet and juicy!

I've checked several grocery stores, in an effort to keep our fruit bowl well-stocked, but cannot find Golden Delicious apples locally. I don't remember ever having a problem buying them - at any time of the year. Anyway, my husband bought a bag of Gala apples, to hold us over, LOL! Between them and the Clementines (mandarin oranges), both of our fruit bowls are well-stocked for several days. (I read that apples need to be stored separately from other fruit, due to the off-gassing they produce.)

I don't buy anymore junk food except for my kiddos if they want some at meal times. They are adults and make their own choices, but the have to take the junk home with them.

I do eat pork rinds while I am on a low carb diet..... I need the crunch. Otherwise I will eat fresh veggies for a snack. Still working on my fridge though. What a mess.

Great idea! I've switched from buying "junk food' to having fresh fruit, homemade yogurt, hard-boiled eggs, carrots and celery sticks on hand. SO much healthier and they taste better, too!

How are you making better choices and what areas of you home and kitchen can you make improvements??? TAKE THE PLUNGE and clean out anything you can to help you eat and be healthier!!!
