Hello fellow Sparkers! I hope this finds you doing well! How are ya’ll enjoying this beautiful weather we have? I went outside and did a walk/run for the first time this season & even though I’m tired and probably will be sore in the morning, it felt GREAT! 

I adapted this week’s challenge from another group I belong in; I honestly don’t remember which one it was or I’d give credit where it is due, for sure! Whomever did post it called it “Taste the Rainbow.” And no, it’s not about those yummy skittles advertised in those commercials. Although yummy, they are pure sugar, & not necessarily what we’re going for here! I am essentially taking their words verbatim, so I don’t want to imply this is all me; I like to gather ideas from other people & make them appropriate for our situation. This challenge is all about color. We are going to ‘Taste the Rainbow’ by choosing different colored fruits & vegetables to eat throughout the day. Let’s aim for… 4 colors per day on our plates. Not necessarily all at the same meal, but just some time during the day. I’ll list some foods/colors below; feel free to add your own so that others may be inspired!

RED: Strawberries -- Watermelon -- Tomatoes
GREEN: Lettuce -- Green Beans -- Peas -- Peppers -- Asparagus
YELLOW: Bananas -- Squash -- Corn
WHITE: Onions -- Potatoes
PURPLE: Grapes -- Eggplant
BLUE: Blueberries
ORANGE: Oranges -- Cantaloupe -- Carrots

Etc.
