I have ordered an instant pot for just this reason! It can take time to make healthy and tasty meals, so I'm hopeful the instant pot will make this eating more sustainable for me.

@HELENCHRISTINE what is the convenience soup? I have the ETL cookbook and it doesn't have a recipe by that name. Maybe it's the Too Busy to Cook Vegetable Bean soup with corn, carrot juice, frozen veggies, etc?

I couldn't do without it. I have the larger one. I almost always make Dr. Fuhrman's Convenience Soup recipe in it for my husband. I make a big pot of it once a week and he and I eat it for lunch every day. Just throw everything in, push a button and wait until it's done (about an hour). Amazing. I also use the cooker for cooking the onions before adding them to beans. I make my tomato sauce in it too. I really love it. I got mine on amazon.com

Hi Peppermint!

It's an electric pressure cooker with lots of safety features so you don't have to worry about blowing the lid off. I can still picture the hole in the ceiling from the old style one that my grandmother was using. They terrify me.

Also the Instant Pot can be used to brown meat before cooking which is of no use to me. However, I live at 5,000', so beans take "forever" to cook. I would imagine that soups would be ready sooner too.

My daughter loves hers, but they are meat eaters and they live at 9,000'.

Remember, nobody can go back to the very beginning and make a brand new start, but anyone can start here and make a brand new end.

Sorry Ellen, I'm intrigued. What is an Instant Pot? Is this something like a crock pot?

Hey All,

I've been thinking about asking Santa for an Instant Pot. Any fans here? I cook a lot of Fuhrman recipes on the weekends, but don't always have time during the week. So two more questions.

What size is best for Eat to Live recipes? 6 or 8 quart?
There are a number of vegan instant pot cookbooks. Does anyone have a favorite?
