Regarding Tofu. The first 2 times I bought tofu it sat in my fridge while I worked up the gumption to try it. I never got to it so I had to throw it out. Then I got a wonderful old cookbook called Tofu Goes West. I learned a lot about it from that book. Here are some thoughts:

First of all make sure it's FRESH! This is super important. If you are storing it for a few days it's good to change the water daily if you plan to eat it plain.

Tofu by itself is an acquired taste. However tofu takes on the flavors of the foods it's with. One of the best things to do is marinate it. 2-4 hours is great or all day if you want to start dinner without having to wait for the marinade. Or if you use it in soups or stews or crockpot meals you may not need to marinate it first.

The texture of tofu can be improved by pressing the water out of it. I have a tofu press, but you can also place it on paper towels or a clean kitchen towel on a plate, then cover it with another plate and place a heavy book on top and let it press the excess moisture out for about 30 minutes.

Another way to change the texture is to freeze it. If you freeze the tofu for a couple of weeks it changes to a more crumbly texture. This is great in sloppy joes, chili etc.

Baking tofu is amazing. First marinate it and then bake it, turning it so both sides brown. You can also fry it, but I don't use oil so baking is best for me.

I hope this helps. Making friends with tofu is one of the better things I have done for myself.

Stir fry, pudding, dips, salad dressing, veggie scramble, crock pot meals I used to make with chicken.

Sometimes I freeze it for a couple of weeks and it takes on the consistency of ground beef. Then I crumble it and use it in chili or make burger patties.

I also make a wonderful tofu stew with the usual stew veggies.

If I marinate it in "Better than Bouillon" faux chicken or beef it tastes like chicken or beef. lol

let me count the ways...:-)

there is the tofu ricotta recipe linked on my latest blog, usually used in lasagne but also in a pasta bake

asian style stir fry with mushrooms and spinach or bok choy

scramble with chard, seasonings like cumin and nootch

a frittata with chard and mushrooms
