we were not sure who would be by so did not make a plan but have in the past had vegan and sometimes made a turkey but now would not make the turkey as the kids don't really want to.
So-

but my eldest who is vegan always eats too much of it! I think using seitan is fine but eating too much of it can be hard on the body so I might cut the recipe in half or make a pot pie with it right away.
It is yummy and I don't have any side effects as i don't pile my plate with it but to much can cause some...gas...

also- I use chcikpeas instead of the flour and have had great success with it

I cooked my traditional turkey, dressing and greens... skipped the additional carbs (rolls, potatoes, cranberry sauce) and did just fine. No weight gain.

My mother and I are planning a quiet day cooking our own food. No problems at all.

A couple years ago I had a vegan family member here. Since thanksgiving had never worked for them, we asked if they'd enjoy cooking us a vegan feast. It was wonderful!

If I were sharing a traditional meal, I'd bring something I could eat and simply ignore the rest. I might have a tiny piece of pumpkin or apple pie, especially if it was homemade. At least it has fruit in it. :)

For me the holiday foods isn't a big deal. I'm just making food for me and bringing it. I have lots of healthy foods I'm making.
