I LOVE this one from the member center at Dr. Fuhrman.com
It cooks up quickly and freezes really well.


Super Simple Creamy Mushroom Soup
MsQ

Serves: 2
Preparation Time: 15 minutes

Ingredients:
1 cup chopped mushrooms
1/2 onion, chopped
1 1/2 cups cooked white beans or 1 (15 ounce) can white beans (low or no salt added)
1 tablespoon Dr. Fuhrman's MatoZest or other no-salt seasoning blend, adjusted to taste
1/4 teaspoon freshly ground black pepper to taste
Instructions:
Water saute the mushrooms and onions until dry and beginning to brown. Puree the white beans in a food processor or blender. Pour pureed beans over the mushrooms and onions, season with MatoZest and pepper.

Low sodium vegetable broth may be added to adjust consistency.

Per Serving:
CALORIES 186; PROTEIN 11g; CARBOHYDRATES 36g; TOTAL FAT 0.9g; SATURATED FAT 0.2g; SODIUM 20mg; FIBER 9g; BETA-CAROTENE 192ug; VITAMIN C 23mg; CALCIUM 90mg; IRON 4.2mg; FOLATE 65ug; MAGNESIUM 88mg; ZINC 2mg; SELENIUM 14ug

With all the recipes out there and boy there are MANY I end up buying all the veggies that are on sale and just putting them together either in salads, soups, baked or sauteed.

These are my favorites:
big salad
baked sweet potato
sauteed onion, mushrooms, cabbages, greens
steamed or roasted broccoli and asparagus
roasted eggplant

soups are not my favorite way but boy are they easy
