I made the veggie broth using the scrapes veggies. I used carrots, potatoes, three types of onion, butternut squash, parsley stems, cauliflower stem, and greens stems. I used fresh celery with the leaves (also used the bottom that I cut off) and one mushroom.

I put all the veggies in my pressure cooker and set for 25 minutes with natural release (well mostly)

And wow wee it turned out, it looks like broth and seems to taste like broth. I just need to try it in soup.

Yes I have made broth from roasted veggie scraps. My problem is getting enough of them to make a full batch. So I now cook them up as I go in a small crock pot and freeze them. I also have bean juice to add into the mix. Wish I had a set recipe but don't be afraid to add seasonings. I have a really problem with most boughten low salt veggie broth as they just don't taste good. The broth bases are the best if you have to buy something.
