Hi,

B- Grilled turkey burger (tablespoon of Memphis barbecue sauce, hot tea, water
S- Slices of Swiss Cheese, water
L- Salad (grilled chicken slices, red peppers, feta cheese, onions, spinach leaves, red wine vinegar), water, tea
S- 4 dark chocolate covered goji berries (15 carbs), water
D- Baked chicken, spinach, small glass of cabernet, water

I pretty much each this every day except I substitute the steak for chicken, tilapia, salmon.

Day 1 - 210.8
Day 2 - 209
Day 3 - 207.2
Day 7 - 203

Happy Monday.
I got called in to sub at the last minute so my first two meals were on the "fly"
Breakfast: Ham roll up(3 slices) with cheddar cheese(1 slice) and a cup of coffee
Lunch: 3 cups of spring mix with 4 chicken wings, a hard boiled egg and blue cheese dressing.
Snack: pork rinds, celery with cream cheese, 6 black olives and 3 radishes.
Dinner: (planned) 4 oz. pork tenderloin, stir fried cabbage, asparagus and some celery sticks.

I was all set to move to OWL and I decided to do a 2 week Induction challenge on another site. So I'll be towing the mark for another 2 weeks.

I had Fage yogurt this morning, with cinnamon and splenda.
Lunch was shrimp caesar salad.
Snack was one square of 85% chocolate with fresh ground peanut butter.
Dinner will be Shiratake noodles with HEB Tomato Alfredo Sauce, Cheese, and parmesan crusted chicken... and maybe some green beans, too!
22 net carbs for the day!

Found some great cookbooks by George Stella!! found them in a bookstore. Bought them on amazon way cheaper. So far we've loved everything we've tried.

Hey, everyone - I bought things for Induction, but I don't knw how to make some of them. Any thoughts on artichokes? And how to make striploin pork? I'd appreciate any ideas.

Cmas Eve dinner was DELICIOUS - made me really love Atkins even more ... we had steak medallions wrapped in bacon, scallops wrapped in peppered bacon dipped in butter / garlic. Avacado on the side. For dessert since it's a special occasion: chocolate mousse (made w/ heavy cream, truvia & chocolate protein powder all whipped up)

I had an Atkins shake this morning. Really good and only a few net carbs. Keeps me full until lunch and does not spike my blood sugars. I have to watch them, however, I try to only have them about once a week.
Lunch: I plan to have a hamburger patty with cheese and a low carb tortilla.
Dinner: Don't know what the hubby is cooking.
Dessert: Will probably be some chocolate bark I made Sunday. Only I put it in small pasty cups with a pecan at the bottom. Yummm.

Recipe: Melt about 3/4 to 1 cup really good Coconut oil (from Health Food store) Nutrivia sp. is the brand I use. The stuff from Walmart..Yuck.

Add one heaping tablespoon cocoa powder.
Stir in 3/4 to 1 cup powdered Splenda.

Pour onto parchment paper very thin or like I did into very small tin foil candy cups. Yummm

Even my dh loves this. Only takes a small bit.

Well, I thought I had a good plan--but ate grapes with my breakfast of 2 boiled eggs/tuna/celery/green peppers. I didn't realize that grapes were so high in carbs. I just started on doing this diet today and blew it with the first meal! I need to read up on it more.

I HAD AWSOME "FRIED" CHICKEN WITH DINNER!
I ROLLED THE BONELESS SKINLESS CHICKEN BREAST IN ALMOND MEAL WITH SPICES! EVEN MY HUSBAND LOVED IT! IT WAS THE FIRST TIME HE DIDN'T PICK THE BREADING OFF MY CHICKEN.
I WAS PLEASED AND AMAZED!

This morning for breakfast I had leftover Garden Frittata (from Atkins site), for lunch I went to a BBQ baby shower and had a hamburger without the bread and for dinner I made the Green Goddess Grilled Chicken with cucumber salad on the side (also from Atkins site).

IT LOOKS LIKE OMELETS ARE BIG HERE! LOL
I MADE SCRAMBLED EGG BEATERS WITH LEAN DELI HAM AND SHARP CHEDDAR.
I JUST JOINED THIS TEAM AND AM HOPEING TO GET SOME GOOD RECIPES AND SUPPORT. I'M IN THE INDUCTION PHASE NOW. I ACCEDENTLY WENT OVER YESTURDAY BECAUSE I RAN OUT OF ALMOND MILK AND HAD TO SUBSTITUTE WHOLE MILK TO GET MY GREENIES AND FIBER IN. WHOOPS! THEN TODAY I ATE CHICKEN NUGGETS BEFORE READING THE CARBS FOR LUNCH...WHOOPS! BREAK OUT THE FIBER AGAIN!

Well, here's what I *made* today... Breakfast was an omelet (5 eggs split in half with hubby) with sauteed onion and mushroom, with a couple of sliced grape tomatoes, a bit of shredded cheddar, and 2oz of sausage. (I only ate half of mine, as I wasn't hungry.)

We went to Lifetime Fitness for our usual Saturday workout, and I ordered their Cobb Salad with chipotle ranch. I was NOT hungry then, in fact, NO appetite until 8pm, which was when I ate half of my salad.

Dinner was steak kabobs with a lime-cilantro-garlic marinade. The kabobs were grape tomatoes, green onions, and fresh mushrooms wrapped in bacon. The serving size was 2 kabobs, but I only ate one, along with my salad.

Anyway... I barely had enough carbs today... only made it because I was craving milk and had an 8oz serving of calorie countdown milk (low carb milk), as I was still short after eating and didn't think I could force myself to eat any more salad or kabob. I only had 1073 calories today!! That's insane to feel this full on so little.

So far I made myself a homemade omelette with green peppers, onions, bacon, ham, cheese and a side of homemade homestyle potatoes...delish!

Hey Lori, That sounds like a delish recipe since I'm a big peanut butter fan~ Smucker's All Natural Creamy is my fav and about the only natural PB we can get in our area. Thanks for sharing! ;)

I have this in my crockpot with Calirice...First time but I am excited because I LOVE peanutbutter!
Got this from the website cook it low and slow.
I substituted it it with liquid splenda instead of the brown sugar though.


1.5-2lbs pork tenderloin
1 onion, sliced in rings
1/4 cup soy sauce (I used La Choy; it's gluten free)
1/4 cup brown sugar
3 tablespoons white wine vinegar
3 tablespoons water
2 garlic cloves, chopped
1/2 cup creamy natural peanut butter
2 tablespoons chopped peanuts (garnish; optional)
1 lime, cut in wedges (garnish; optional)


The Directions.

Use a 4-6 quart crockpot. Put onion slices into the bottom of your crockpot. Put the pork on top. Add brown sugar, soy sauce, vinegar, water, garlic, and peanut butter. No need to stir--the peanut butter needs to melt before you can do so. Cover and cook on low for 8 hours, or on high for 4-6. The pork will be more tender the longer you cook it. 1 hour before serving, flip the meat over in the crockpot to allow the other side to soak up the peanutbuttery goodness. Garnish with chopped peanuts, and serve with lime wedges. The lime juice mixed with the peanut butter is delicious.

The Verdict.

I snuck a taste. sshhh. Don't tell my mom. It was good; quite tender. I made some more of the sauce to spoon over some already-cooked chicken I had in the fridge---it was fantastic. I packed the meat up for my friend Stephanie and family. When I asked what she thought, she told me that she had a problem. Her husband, Bill, was home from work and ate it all. She and the kids didn't get to try any of it. I'm thinking that means he liked it.
