That sounds good - minus the mushrooms. You no eat chicken, me no eat mushrooms. I don't like to make Smurfs homeless. emoticon

I've got to dig out some cookbooks....one roommate is on a strict low-sodium diet and can't have more than 2000 mg per day along with no more than 2 liters of fluid. It could be easy to handle the low sodium with more fruits and veggies for her, but that's all fluid. Try juggling those apples....OY! Worse part of it...since she's been home all I've wanted to make are BLTCCs and/or hot dogs. She can't have either.

p.s.: BLTCC = bacon, lettuce, tomato, cucumber, and cheese. YUM!

Kimi if you still have some Italian sausage --- I love to use them in scrambled eggs, potatoes, mushrooms, and peppers. Also, you could use them in a tomato vegetable soup.

Tonight I'm having grilled pork chops, smashed red potatoes, and corn.

I tried a Curtis Stone recipe last night and was a tad disappointed. It was a cold steak and pasta salad. Wasn't much on flavor. I think I could have come up with a better dressing that would have jazzed it up a bit.

Tonight I'm going to try my first attempt at rotisserie chicken on the grill. Have a couple of chickens and a couple of hungry nephews, so this should be interesting. Wish me luck!

That depends on the weather. If it isn't raining, I'm going to grill out some Iowa Chops and make an oriental cole slaw. If it is raining, I'll have to come up with something else and grill out tomorrow.

Tonight is breakfast for dinner!

Breakfast burritos

Cook separately:

Jimmy Dean Low Fat sausage (it is surprising how low fat this cooks up. I put it in a bowl with some paper towels to soak up the rest of the fat)

Hash browned potatoes -- cooked but not crispy. (I do this with a little cooking spray and a non-stick pan)

Egg Beaters -- scrambled.

Once everything is cooked, mix together and warm back up. Fill a 100 calorie tortilla with egg mixture, a couple of pinches of cheese, and salsa. Wrap up like a burrito and enjoy!

325 calories and very filling!!! I've even sauteed some onion and green pepper and added it to the egg mixture.

Because of the packing this weekend, Mom's Day was pushed back for us. We are taking my Stepmom out Tuesday for dinner. She wants to go to Lone Star Steak House. This could be a disaster or I can make this a good meal. Instead of eating a steak, I also love their grilled shrimp -- 10 shrimp for less than 100 calories. Add a dinner salad, steamed veggies and even one of their calorie laden dinner rolls and I'll have less calories than one of their orders of steak fries. I'm going to be a woman with a plan!

I put the pork loin in the crock pot this morning, Laura and seasoned it with french onion soup. About two hours before DH had his supper I added a couple tablespoons of BBQ sauce. He loved it. I saved the doevers ( emoticon ) and put them in the freezer. He can have pulled pork sandwiches one night and I doubt he will make the connection.

Next week I want to try the loin with the panko bread crumbs. He loves pork.

We're having my son's version of Shepherd's pie. He only likes mashed potatoes, meat, and cheese in his. So, I have to fix my veggies separate. It's actually a pretty lo-cal version of Shepherd's pie. I make the mashed potatoes for fat-free half and half and low fat butter. The ground beef is extra lean and the cheese is low fat.

The fruit salad sounds really good Sue! I think I could eat a whole bowl of really great tasting fruit. I think I still have a cantalope in the fridge. I will have to cut that up tonight for dinner.

Yesterday (Sunday) was a full roast chicken dinner with loads of veggies and today I will use up the chicken in a chicken and mushroom risotto.
Both days we have a huge fruit salad for later, with pineapple, melon, grapes, banana and pear,yummy

After work tomorrow I'm needing to do my grocery shopping -- I didn't have time this weekend. I also need to figure a menu plan out since a few more meals will be away from home.

I took chicken out of the freezer for tonight... but not real sure what to do with it yet. I will probably just grill it up real quick with salad, sweet potatoes, and a non-starchy veggie. Or maybe some rice and beans.

Not sure about tonight...it's just DH & me....my son went out for Mexican food for a fundraiser. I'll probably have hamburger patty and veggies, and a salad. Veggies with a side of veggies! LOL

Tomorrow we're celebrating Cinco de Mayo with Tri-tip in tortillas with sauteed onion & bell pepper, salsa and avocado! YUM!! Only I'm not having the tortilla....just the guys will....but yum just the same! Black beans and a salad on the side!

I'm hungry....

I have no idea what I'm going to make tonight. My kitchen help has been studying for finals and my kitchen is a mess. So I'm going to play the good aunt and do the kitchen chores for him tonight in exchange for a better grade on his finals if he spends the time studying.

I have some imitation crab in the fridge, so I might do something with that tonight.

Tonight-

Steak and Cheese Quesadillas with salsa and sour cream for the family

I will be using 1 corn tortilla (like a tostada), light on the steak, Laughing Cow Cheese, topped with Salad, Salsa, and Greek Yogurt.

I am not sure if I want dessert today or not. If I do, it will be something from Skinny Cow.

I didn't get to have my Tilapia last night as the boys had their Karate awards ceremony which ran late and waaaaaaaaaaaay long - so ended up grabbing Panda Express for dinner... Went with chow mein and broccoli beef bowl - was able to stay within my calorie and fat range but a little over in carbs...

Tonight, however we will be having the Tilapia and fixings!!!

On the menu for Thursday - Tequila Lime Chicken, black beans, Mock-A-Mole, sauteed onions, medley of peppers, zucchini, yellow squash, shredded 2% mexi blend cheese, homemade baked tortilla chips and SkinnyGirl Margaritas !!! Viva La Cinco de Mayo!!!

I'm going to post my lunch. I'm teaching a class all day for the next three days. Today I didn't have time to pack a lunch and had to grab quick fast food. I decided to try Hardee's new turkey burger. They are suppose to be around 550 calories. I had them leave off the ketchup and mayo and instead put on some mustard. I got the one that came with onion, lettuce and tomato. I added a little salt and pepper since that was the seasonings I had in my desk. It really wasn't too bad at all. I think that it will become one of my go-to fast foods when I need to hit one. If I was going to take it home to eat, I might put a different seasoning on it. When I make my own turkey burgers, I like Emerir's Essence seasoning on it.

Canned fish pie
Mix together the fish and season,place in oven proof dish and top with mashed potatoes and sliced tomatoes and bake for around 30 minutes, quick and easy and full of fish oils.Serve with either veggies or salad

This is my new favorite breakfast (thanks, Chef Meg!):

1 waffle (I made a batch on the waffle iron with Bisquick Heart Smart and froze most of them)
1 T peanut butter
1T reduced calorie pancake syrup

Put the PB and syrup on the heated waffle and enjoy! Protein to keep you satisfied, plus fiber from the waffle (if you choose properly!)

I also added blueberries or strawberries, depending on what is on sale.

It's a great, healthy treat!!

It's leftovers today. After working 9 1/2 hours today and then having an hour long conference call, I don't feel like fixing anything. So, it's leftover turkey, Spark recipe mac & cheese, and green beans for dinner tonight.

I'm working on meal planning for the month. Tonight, we are having two sweet girls (my roommates' great nieces, 5 & 8) over for dinner. Not a good meal but one of their favorites ~ mac & cheese with hot dogs.

I am planning on using a measuring cup for my mac & cheese serving, no bun for my hot dog, and adding either broccoli or green beans to my plate.

Big grocery shopping trip is on Saturday (after we all get paid), so we will be making do with things in the freezer and cupboard this week. I'll get creative and do my best to make things as healthy as possible.

I have been so BAD about meal planning. In fact on my list of things to do today is check the freezer and see what meals I can come up with for the week.

Tonight is our first BBQ - we picked up a nice Beef Ball Tip (trimmed nice and lean). I'll put a couple of potatoes in the oven to bake and throw a green salad together.

I have been slacking off with meal planning, but I am getting back in the groove. I know it makes a difference, so no more excuses!

I add about 1 cup chopped mushrooms, 1 cup chopped fresh spinach, and 1 can diced green chilies to the mixture. It ups the veggies and the flavor.

I've been struggling with meal planning lately -- mostly I haven't had time to do it. I've sketched out a simple plan for this week, however, my plan is to get out my cookbooks and start making some new recipes. I'm ready to get out of my rut!

Many of us struggle with the constant question? What's for dinner? We tend to get into a rut with the meals that we plan. This is a thread that will assist you and others to come up with meal plan ideas.
