The garlic and Worcestershire added enough flavor that we didn't miss the meat. It was an internet recipe. Some say used smoked turkey wing or neck but I didn't think I could find that anyway.

This week's new vegetable: I found pre-washed greens at the supermarket. I don't know how long they've been there. Turnip, mustard, and collard, combined.
I put some olive oil in a Dutch oven, sauteed minced garlic, then added the greens, a can of chicken broth, and 2 Tbsp. Worcestershire sauce.

Not that I don't enjoy bacon fat. . .

Another good idea!

Just as I started wanting some grilled veggies, my supermarket deli has started selling them. Expensive this way, but cooler than doing it myself.

Next week it should be cooler here and I could do it.

Meanwhile, I got a butternut squash and am wondering about microwaving first, then finishing in the oven. It seems to call for brown sugar, but I'll try just cinnamon or check what recipes say. On another website, someone mentioned butternut squash cubes you can buy. We don't have them here.

Love the plan!
My favorite way to hide vegies is to put spinach, chard or other dark leafy greens in with my pasta, quinoa, rice or couscous. I just cook it in there as I cook. I mean- I love greens, and yes, I eat it raw, too, but when I have guests who are not used to having lots of vegies, they really enjoy that method. Tasty.

These are two good ideas, for things I had forgotten about liking. It's 103 here, but I could grill in the morning, and do enough for a few days. It's going to take some effort and I'm ready to do it.

I would suggest cooking veggies on the grill. It gives them a nice crispiness and there is nothing like the flavor of grilled food. You could spray them with olive oil spray and sprinkle Mrs. Dash over them before or after grilling. You can wrap them in foil or use a grill pan with small holes so the veggies won't fall through. Just some ideas. It's great that you are trying new veggies. It took me a while, but now I crave those over the sugar, fat and salty stuff. Really.

Put the parmesan on right away - I'd say 350 degrees until the parmesan starts to brown just a touch :)

Frozen veg's are definitely allowed. The honey and vinegar trick was for frozen, plain veg's. We don't have a Trader Joe's. We do have some good frozen veg's with a cilantro sauce that my husband loves. I try everything.

I do like zucchini. How long do you cook it, and what temp., before you add the parmesan?

I shop a lot at Trader Joe's, I don't know if you have any close by, and they have a good selection of frozen vegetables prepared in different ways. I find frozen to be so much easier to deal with then fresh - is that allowed in your plan?? :)

If you'd like an idea on veggies - take some zucchini and cut it into slices. Top with a tiny bit of olive oil and some sprinkled parmesan cheese and back in the oven. Yum!

There might not be any recipes worthy of sharing. The accomplishment will be in buying them, and actually eating them. The effort required is something I have resisted. The chopping.

I remember a discovery from the past: cooking veg's with honey and vinegar. It tasted great, but I won't be adding honey or any kind of sugar. What I'm aiming for is acquiring a taste for them, when all I want is "the crap," lots of sugar, salt, fat and refined carbs.

Butter is another "no-no." Even the new healthier margarine substitutes, with no trans-fats, are suspect--so I suppose olive oil is the way to go.

I'll cook a new vegetable in a new way, at least once a week. By "new" I mean almost anything besides lettuce, because that has been our main vegetable--that, and steamed broccoli. It's not enough for the IDOL challenge, so I'm not joining that. Once a week is all I will commit to, for something new and different, even though we eat veggies every day.
