Breakfast was two bananas (I grabbed them before I went to work). Lunch was a salad from the salad bar at the supermarket and dinner was Vegetable Makhani from Indian take out.

Thanks for the reminder. I have had this goal unofficially for almost a year, but often forget. I will make a conscious effort this week. I have no meat in the lunch I've packed, and only eaten cereal and cashew milk with fruit for breakfast, so today is the day.

Ooh was it on pizza? The first time I had prosciutto it came on pizza. Actually that's the only way I've had it so far.

For my first meatless day I am thinking a smoothie or overnight oatmeal (I got my mason jars), creamy chickpea salad sandwiches*, and veggie burrito bowl**.

I am excited about this challenge. I am starting this challenge today, in part due to the Lenten tradition of doing so. I plan to attempt a vegan week. I will do this while my husband is out of town, just to keep meal planning easier. He is willing to go vegetarian, but not quite vegan!

Challenge
Pick one day out of the week where you go completely meat free (this includes seafood). It doesn’t have to be the same day each week as long as by the time day 7 rolls around for the week you had one day where you went completely meatless.

On your meatless day come back into this thread and tell us how your day went. Share dishes or recipes if you want too as well or tips for your fellow team mates. You can even whine about how hard this challenge is (if it is :D).

Length
The Challenge is 4 weeks long and starts March 1st and ends March 28th.

Prizes
Each week everyone that takes part in the challenge will receive a team goodie.
