I only have 3 muffins left lol out of 2 dozen I made yesterday morning. My mother likes them and so does my husband. I'll be making these again. What's great about muffins is they are very versatile you can take some things out add others etc....

I made these today and they are awesome. Really nice. I give them a emoticon I used oat milk though instead and rice bran oil. Everything except the rice bran oil was organic.

Here's a recipe I'm going to try in the next day or two for when I feel like a sweet treat.

I brought some organic oat bran the other day 1 and half kilo's of it.

These should taste pretty good I am thinking and be reasonably healthy for a treat!

Oat Bran Muffins


8 Ingredients 70 Calories 35 Minutes

Ingredients

2 1/4 cups Oat Bran Cereal
1 tablespoon baking powder
1/4 cups brown sugar
1 1/4 cups skim milk ( I will most likely be using oat milk)
2 egg whites
2 tablespoons vegetable oil
1/4 cups walnuts
1/4 cups raisins

Directions

Preheat the oven to 425 degrees.

In a large bowl, combine the oat bran cereal, nuts, raisins and baking powder.

Stir in the brown sugar or liquid sweetener.

Mix the milk, egg whites, and oil together and blend in with the oat bran mixture.

Line muffin pans with paper baking cups and fill with batter.

Bake 15 to 17 minutes.

Test for doneness with a toothpick.

It should come out moist but not wet.

Makes 12 muffins.

Store in plastic bag to retain moisture. (I will store in glass container as I prefer glass over plastic for health reasons)

Keep in refrigerator.
