Thanks for the suggestion! I'd prefer to keep the nuts completely out of the house though just to avoid any accidental cross contamination in the future. I can add in something like pumpkin seeds :)

That's a shame with your husband unable to the walnuts perhaps you could make two small bowls each one for him without the walnuts and add them in for yours. Just a thought anyhow.

Thanks for sharing! I would have to skip the walnuts as husband is allergic to tree nuts but other than that sounds wonderful.

For me as i don't like Goats Cheese I would omit that from the recipe otherwise I think it would be a great recipe that i will try.

Spinach, Apple, and Walnut Salad



INGREDIENTS

2 Golden Delicious apples, cored, cut into large dice
4 tablespoons lemon juice
2 (5-ounce) packages (8 cups) baby spinach leaves
3 tablespoons extra-virgin olive oil
1 tablespoon apple cider vinegar
2 tablespoons honey
2/3 cup crumbled goat cheese
1/2 cup chopped walnuts, toasted

DIRECTIONS

Toss apples with 2 tablespoons of the lemon juice. Place spinach in a large bowl; remove long stems and bruised leaves. Whisk together remaining juice, olive oil, vinegar, honey, salt, and ground pepper to taste. Toss spinach with apples and dressing. Divide between four bowls. Top with cheese and walnuts.
