Yikes, I hate crutches! I never really got the hang of them, but fortunately only needed them for a week or so with a torn ligament. Then I went to a walking cast. Much easier!!!

I'm having surgery in April to repair a hiatal hernia. That's going to be really weird, because the week before I have to be on a "liver shrinking" diet so the surgeon has more room to work. After surgery, I'll be on a highly restricted diet because of the swelling and healing. I'm just hoping it doesn't mess up my healthy eating, though it's likely to take off more weight.

I'm glad to see you're back and I've always loved your artwork.
I can relate to getting back to exercise. I'm on crutches through the rest of this month (minimum) and will be restarting my 2010 exercise journey once the current journey is finished.

Thanks Kali! I signed up to this team ages ago, but haven't been very active on sparkpeople for quite awhile. My eating seems to be working out very well for me, but I feel that I need some encouragement to excercise, so I'm trying to get more active in my teams for inspiration.

Mini Avocado & Hummus Quesadilla Recipe {Healthy Snack}

Prep time 10 mins| Cook time 8 mins | Total time 18 mins

Serves: Serves 12

Ingredients
4 whole wheat tortillas
cup hummus
tsp ground cumin
1 tbsp minced cilantro
California avocado, cut into 12 slices
1 oz. crumbled queso fresco

Instructions
Using a 2-inch circle cookie cutter (or a glass with a 3-inch circumference and a small knife), cut 3 circles from each tortilla.

In a small bowl, stir together the hummus, cumin and cilantro.

Spread 1 teaspoon of the hummus mixture on each tortilla circle. Divide the avocado slices and queso fresco evenly between the quesadillas, arranging them on one half of the tortilla circles.

Heat a large skillet over medium heat. Place several quesadillas in the pan and cook until the tortillas are golden brown, 2 to 3 minutes per side.

Repeat with the remaining quesadillas. Serve.
