I fixed lentils/soup beans & turkey. Placed in small containers, for the days I don't want to cook.. I will just steam kale, spinach, etc. and eat with the beans.

In my CSA package...I got spaghetti squash...never had it before....so...after baking the squash, I scraped out the softened squash, added it to sauted onions, peppers and diced tomatoes....ohhhh yeaaaa!!! that was great!

Fall seven times...get up eight.

I agree. Meat is something that is not my priority but have been eating more fish and need to eat more veggies. Have eaten meat sittl, off and on though. The last few weeks I ate too much meat and felt bogged down and not so good. I had gone almost two years with just fish for meat then when hubby went back in the nursing home and I ate with him, ate meat and had been doing it again. Now trying to do just the fish again. I don't really want the meat...just a case of going along with what is there.

Nice article and I definitely agree with the message. I am not anti-meat. It just isn't something I want a lot of in my diet right now. But I think any diet based around home-cooked whole foods is 95% of the way there. The rest just depends on the needs of the individual.
