So my go to book is none of these but with substituting tofu for meat, coconut milk for cream, flavored olive oil for butter, nearly all the recipes work - Healthy 1 2 3. But I will save you time and money but just throwing out some of the three ingredient combos.
-sweet potatoes, oranges, fresh ginger
-French lentils, shallots, port (I use a white zin)
-string beans, onions, walnuts
-mushrooms, coconut milk, marsala
-zucchini, cherry tomatoes, kalamata olives
-asparagus, tofu, peanut oil
-red onions, tofu, pomegranate molasses
-avocado, mango, almonds
-corn polenta, tomatoes, mozzarella (you can get vegan cheese), basil
-eggplant, red peppers, garlic
-honey dew, arugula, black pepper
-peach, ginger, celery or fennel root
-pear, cheese, dill

Treatment: bake, sauté, pre-cook and cool over salad greens, pulse grind for either hot or cold soups. As centers for gluten-free bread sandwiches or Panini (last four are amazing this way)

I even came up with my own which is a huge surprise good - sauté cauliflower until browned, add some green seedless grapes and a tad of Dijon mustard. Don't overlook lighten sautéed fruit like mango, grapes and oranges along with the "bitter" vegetables - completely changes them. trick is to add right at the end.

I'm looking for a cookbook that is vegetarian (vegan is ok, too, but I do eat eggs...lots of eggs), but also gluten-free, soy-free and dairy-free. The cookbook wouldn't need to be completely free of all of these ingredients as long as the majority don't require them--especially soy and dairy (gf flour is a pretty easy sub).

Any suggestions?
