We've done make your own ice cream in a baggie on family camps. I'm at least 89.5% confident I picked up a recipie for it on sparkrecipies.com. Skim milk, splenda, vanilla in one bag, squish it around in a bag with ice and ice cream salt. good stuff.

If I am going to be close by, I freeze low sugar pudding with non-fat milk with berries and by the time our hike, what not is done, it's thawed to eat. My son loves fresh fruit in general, and we both like to mix it with low cal cookies baked at home. Otherwise everything we make is berry centric and from recipes on sparkrecipes. emoticon

Cinnamon graham sticks and apple sauce cup as a dipper. Can take them with you! I also like Fat free cool whip, mix cinnamon and pumpkin pie spice in to make a pumpkin dip and dip with Cinnamon grapham sticks. Low fat and family loves it.

Try no-fat cottage cheese and mix in sugar free orange jello. I mix in mandarin oranges. I put them into individual servings or I would eat the whole thing... when this is chilled it is irresistible. My Dad had some and did not know it was my "diet" dessert and loved it!

Or to go with your foil dinners, a banana sprinkled with cinnamon, brown splenda (instead of sugar) and a spray of "butter". Keep banana in skin, peel the inside of the "smile" part, sprinkle cinnamon, splenda and butter, replace peel and wrap in foil. cook on coals and carefully open and eat with a spoon....
Next time I go camping I am going to try a little dry cocoa with it....

Fruit with cool whip lite. The cool whip lite only has 25 calories per serving and if you use one or two servings and mix it in a cup of fruit it is good.

You are not what you eat, though you may look and perform like it.
