there really is no such thing. heat and humidity are enemies of frosting. I keep the bakery at 60 degrees with the a/c all the time. everything keeps well at that for the overnight before delivery. I warn clients that if their wedding is not in a climate controlled building they might want to put the cake inside if the temp is over 70.
One of the venues i deliver to is a huge hall..and no a/c. sometimes people bring in their own window units, but i always warn them to at least turn on the big cattle fans the venue provides. one time the bride did not heed my warning. when i took the cake in, 2 hours before the reception was to start (they have to go that early as some guests show up early and you do not want to be doing setup when guests are arriving) it was 120 in the area set up for the cake!!! i called the bride..she said oh well just set it up. it lasted for the pictures and all..but it was a cake with stairs and bridges and a fountain. they did lose one staircase to sliding frosting, and the buttercream was a bit soft, but it was well crusted before delivery so she got lucky.
and thats the other important thing..be sure to use a mix of crisco and butter not straight butter. butter will melt faster than crisco..which will let the frosting hold up better. do the frosting the day before the warm event so it has a chance to crust, and chances are unless it is in direct heat it will be fine.

I will be baking a ton of cupcakes this summer for various parties and fundraisers. It will be HOT this summer and I won't always have refrigerator space to keep my finished product cool.

Will you please share your favorite "no fail", "NO MELT" frosting recipes with me?
