THE CHICKEN A LA ORANGE WAS FROM THE"WOMANS DAY" MAGAZINE OCTOBER 2012 ISSUE, THEY HAD ADAPTED THIS RECIPE FROM JULIA CHILDS COOKBOOK,"MASTERING THE ART OF FRENCH COOKING"/DUCK A LA ORANGE.I THEN REVISED THEIR RECIPE BY USING DEL MONTE MANDRIAN ORANGS(SNAK PAK) INSTEAD OF THE ORANGE MARLMALADE AND IT WAS VERY YUMMY! THIS IS A DISH I WILL BE SERVING WHEN I AM HAVING COMPANY ! emoticon

Okay, this was quite yummy and will definitely be on my table more often:

The recipe I used was published in the Whole Living Magazine last October/November 2011, the link to the recipe is below. I never really liked brussel sprouts, but the flavor from the roasted thyme with the balsamic vinegar really enhances the sprouts and the bitterness is balanced with the grapes and walnuts made this dish disappear and most likely will be on my Thanksgiving menut this year.

I made from scratch banana nut bread this week. My grandkids loved it and it is just great with some fat free whippped cream cheese on it. We also incorporated steamed squash into several of our meal plans.

I'm in too. I think I will try some sort of pumpkin or squash soup as I love those veggies. I sure hope it comes out right though. I will keep all of you posted and let you know how it came out.

HI Team! I had never heard of sunchokes but it sounds interesting?? i have purchased a acorn squash and will look for a recipe and cook it on saturday. i slenderized a recipe i found in Womans Day for orange chicken and it turned out really great so i will post it with my acorn squash recipe on saturday!!have fun everyone and bon appetite! i have not decided on a fruit yet,still searching!

Tonight we will be having roasted veggies, with rutabagas as my new fall veg. We will also be having turkey meatloaf instead of beef, with other healthier ingredients as well.

Although this actually meets the challenge, later this week we will have acorn squash. I may have had it before, but I do not remember. I certainly have never cooked it. Woo-hoo for trying new things! emoticon

My favorite fall dish that I want to share is Cinnamon Apples.

Combine 1/2 c. sugar, 2 c. Red Hots and 1 c. water in covered 2-1/2 qt sauce pan over high heat to dissolve sugar and candy. Reduce heat. Add 6 C. apples thick sliced and cook until tender (about 10 mins.). Remove apples and boil syrup about 5 min. Pour over apples and refrigerate. These are so good with turkey at the holiday and make a nice dish to take to a covered dish party. In order to make it healthier the only thing I can think of is to use artificial sweetener for the sugar but I'm not sure about that.

Life is crazy busy so I jumped on this challenge before I got inundated with other concerns. Sunday I made butternut squash. Cubed into 1 inch pieces, simmered in 4 c water with 1c brown sugar for 2 hours. Yum! Healthier would be brown sugar Splenda. Monday, I reworked sour cream chicken enchiladas toward "progress not perfection". Chicken breasts, frozen spinach, green chilis, light sour cream, fat free cream of chicken soup. I used flour enchiladas, as my kiddos won't go for wheat tortillas (yet).

Here is my trial with Sunchokes: I did them like I fry potatoes. Peeled the bigger ones, scrubbed the little, sliced them in thin rounds, fried them in peanut oil, sprinkled with parsley, chopped onion, thyme and salt and pepper. The recipe I saw said sprinkle with 3 T. toasted sunflower seeds but I didn't. If I did them again, I'd use bacon drippings and crumbled bacon for flavor. I'm glad I tried them but I'll take good old fried potatoes instead!

Sorry for being tardy, but I am in!

I think I might try pumpkin this year. I tried it once as a kid and didn't care for it much. It's time to try again since my taste in food has changed quite a bit since then.

Hi Challengers! I am doing a recipe with Sunchokes (Jerusalem Artichokes) that I've never eaten. They can be sauted or roasted - and peeled or just scrubbed. Does anyone on the team eat them??
