Not too good today. Grapefruit for breakfast only. So busy having fun today I forgot to eat until just now, and I only ate a cup of cream of chicken soup so I don't mess up my stomach by eating so late.

For dinner today, I cooked a steamed mix of snap peas, snap beans and asparagus.

My DH had a run down to McAllen today and he noticed all of the fruit stands open down there. The roadside ones have not opened up here near San Antonio yet. He has another run down there tomorrow so he is going to stop and pick us up some watermelons and oranges. I have had horrible cravings for watermelon lately.

I was a participant because I joined the challenge; however, I did not post my food to the challenge as I didn't understand how at the beginning of the week. I don't normally post my food to Spark as I am not dieting. I do post my exercise. I did, however, try to have a fruit and/or vegetable with every meal and I pretty much succeeded in this challenge. I am proud of all of you for eating your fruits and veggies and hope this will become a way of life instead of just a one-week challenge.

Friday had lots of fruit, cantaloupe, honeydew, grapes, strawberries, sliced small at a party for a couple celebrating 90th birthday. I also had brocolli, celery sticks and carrots sticks, small tomatos with spinach dip and, spinach in philo dough - so light and tasty.....

I had red pepper, mushrooms, onions over my salmon for lunch.

At dinner I put the leftover of those in a can of tomato sauce, for spaghetti, and had left over asparagus, and mixed broccoli, carrots, and snow peas as well.

Thursday morning juice: 1 cucumber, 3 celery stalks, 1 cup spinach, 2 apples, 1 lime, & 1 inch of ginger. Can I just say, I LOVE my juicer!

I like how we list what we ate. Sometimes seeing combinations of veggies sparks a new recipe to try. Today is my "day off" as in I don't have to make anything to send to work tomorrow. My hubby has a tradition of going out on Fridays with his helper............sometimes they even invite me..........LOL So I think I'll go to the big market and see what they have for the next few days.

Hey team, today is going well!

My morning juice consisted of 2 1/2 cups of strawberries, an apple, and a lime.

I let some coworkers talk me into going out to lunch with them, but I had a big pile of shredded cabbage with my fish tacos (not fried).

Yesterday's fruits and veggies: Morning juice: 1 grapefruit, 2 pears, and 4 oz of blackberries. Lunch was a rice bowl that included grilled peppers and onions and corn. For dinner I threw together a quick "salad" of leftovers made up of asparagus, corn, avocado, cherry tomatoes, salsa, and black beans.

I don't know if we should be naming them or not -- THIS IS MY FIRST CHALLENGE, EITHER GIVING THE CHALLENGE OR EVEN PARTICIPATING IN ONE. But........with the giant amount of fruits and veggies you're eating, it doesn't seem necessary to name them to me. Maybe someone else who is more familiar with challenges has a different opinion?????

Yesterday's challenge info:

I had a protein smoothie (medium banana and 1/4 cup of mixed berries) and lunch I had a single serving of broccoli and cheese and dinner wasn't so good...We were a little hungry after Family Zumba and wound up having burgers...at least there were lettuce, pickles and tomatoes on there.

I'm starting a day late but I'm in! My husband recently gave me a juicer for our anniversary and I've been having fun experimenting with different juice recipes in the morning. I haven't yet figured out how to enter the nutritional information for them. Any ideas?

I didn't see the email until after lunch, so I didn't eat any fruit for breakfast. I had mixed salad greens and artichoke hearts for lunch. At dinner I has brussels sprouts and mushrooms, although I don't know if fungi count as veggies.

Lunch - I had a Subway Oven Roasted Chicken Breast (with hollowed out bread) loaded with veggies (lettuce, tomatoes, cucumber, pickles, bell peppers).

I love this challenge! I am in.

BountifulBaskets.org is a food co-op in Texas where you can buy a basket of fresh fruits and veggies for $15 a week. I did it this week and received bananas, a Pineapple, clementines, grapefruit, peppers, fresh basil, bib lettuces, kale, 2 bunches of asparagus, 2 cartons of fresh Tx blueberries I can't remember what else but it was enough fruit and veggies for the week!
