I had a multigrain bagel this morning so I got in my whole wheat!I love the idea of using whole wheat flour on chicken instead of white. I never did that...will be trying soon!

I hit this challenge right on the head. First thing this morning I had oatmeal for breakfast. I tell you this might be the easiest part of healthy alternatives for me. I have started using whole wheat flour for everything. I made chocolate cookies and accidentally put only 2 tablespoons of butter instead of two cups (it asked for two sticks, I thought it meant where the lines are on a stick of butter instead of the whole stick). My boyfriend said they were the best and healthiest chocolate chip cookies he had ever had. We even used whole wheat flour to coat chicken strips instead of regular flour. It sticks much better by the way. Look on the back of the ingredients for chips and crackers and make sure it says "Whole wheat flour" and NOT "enriched wheat flour". That just means that they cut the grain too early and had to reinfuse some of the vitamins, but it isn't as good as waiting until the grain matures as in whole wheat.

I'm heading out of town for a few days and will have intermittent access to the internet, so some of the challenges may come early.

Your Daily Challenge for Monday July 21 (optional) is to get at least one serving of whole grains. Whole grains are an important part of a healthy diet. They help maintain a healthy body weight and a healthy heart.

The U.S. Department of Agriculture suggests how to include more whole grains in your diet:

Replace refined foods, such as white bread and white rice, with whole wheat bread and brown rice.
Use whole wheat pasta in casseroles, macaroni and cheese, and other pasta dishes.
Snack on whole grain, low-fat chips or popcorn (without salt or butter).
Cook with whole grain flour.
Use whole grain cracker crumbs or bread crumbs as a breading in meatloaf.
