I LOVE this recipe and you can freeze it in containers and eat it for weeks. LOVE it! If you are a vegan, you can leave the chicken out. Also, add or delete any items you want. That's the fun of Crock Pot cooking I think. I will try to put the measurements in, but I usually eyeball everything.

Enchilada Chicken Tortilla Soup!
1 box of Low Sodium Chicken Broth
1 can of black beans, rinsed.
1 can of chopped tomatoes
1 can of black olives
1 can of corn (if you want)
1 cup of your favorite tasting fresh salsa, not a jar one.
1 big can of red enchilada sauce (very low in calories) or you can use 1 packet of enchilada seasoning low sodium.
4 to 6 frozen chicken breast (like from Sams or Costco bags)
Add some water at the end, if needed or along the way of it cooking.
Cook on high for 6 hours and shred chicken. Keep on low thereafter. If there is too much in the pot, pour in 1/2 of the enchilada sauce after your serve some up.
Possible sides to add: I let peeps put on their own toppings. shredded low fat mozzarella, fat free sour cream, cilantro, avocado, baked tortilla chips or a small amount of regular ones. Onions if you like them, I don't care for them.
I take this to work and have a cup for lunch. It's amazing and fills you up. Let me know if you like it. Sorry, I don't have the nutrition facts. In my own opinion, I try to use my common sense for servings. This really fills you up, so you won't eat too much. When I wash my dishing after eating this, it rinses off easy, no grease! Enjoy!
