great idea. In fact this reminds me of eating crepes when I lived in Germany that were made with eggs and wheat flour, but could be made with eggs and almond flour, that were filled with all kinds of yummy savory things, like a mix of veggies, meats, cheese, mushrooms. It would be a great change from omelets of all kinds. A crepe is really just a thin pan-sized pancake. I'm getting hungry just thinking about it.

Thank you all. I always liked pancakes, too, but couldn't stay full on them. With bacon or sausage on the side and lower carbs they might last me a while. I will check out the recipe.

I love pancakes - it was a staple when I was a child. I posted a question on the original thread about the nutritional value/serving size.

Around one gram of carbs per pancake. I enjoy mine with low carb syrup, though melted butter might be pretty good too.

Oh yes, bacon. Bacon with breakfast.

I have never thought of making pancakes like that. Just one egg and some almond flour and milk? Somewhere I have some blueberries I got, but I can't find them. Pretty bad, huh. Guess I will have to take everything back out of the fridge to find where those got to.

I also like the nuts, though it is a bit of work to be able to eat them. I will try that again, though. I might be able to have the eggs worked as soft boiled or something.

Have you considered pancakes made with just eggs and some nut flour (almond or any other that you can grind in your food processor)? I just add a little water to that (or milk/cream, if you ca tolerate it) and put a few berries in the batter or on top. To me pancakes taste very different from eggs, even if they are 50% egg.

I like nuts but as a snack not a meal. Maybe cottage cheese? How about a different preparation for the eggs? If not then I would go for the meat and cheese. Maybe think outside the traditional breakfast foods or something like tuna.

Earlier this year I was doing okay with some lower carb eating. For breakfast I would have a scrambled egg with cheese and some ham or sometimes some asparagus. Last month I got a really bad cold and didn't feel at all like cooking, so ended up eating stuff like prepared soups and stuff. I am trying to get back into the low carb, but I cannot stand the eggs now. Does anyone have any ideas what I can eat other than that? I can't eat wheat and such, can't handle yogurt. I have some smoked sausage (don't get too often), some ham, some hamburger, often some chicken that I can eat. I have problems with a lot of vegetables with my IBS. Just looking for something else that might be good. Or should I just find different recipes to use the meats I have been using and forget the eggs. It seems the eggs keep me full, but the dog ends up getting at least half of them since I can't seem to stand them anymore.
