I have been eating eggs in the mornings quite often. I will cook some asparagus in spreadable butter and add ham and then the egg and then cheese or else leave out the asparagus and ham (don't always have that). I also got the 85% lean ground beef instead of 93% lean (mainly because the 93% was $4.99/pound and I can't afford that), but I think I will have to wash that kind of ground beef to get rid of some of the fat because it tasted horrible. I think what I prefer is between those two.

Thank you for the ideas. I will try to find some veggies that I would like or can eat sauteed. I am a little limited on them because of my gut problems, but I keep trying a little here and there.

I agree, add fat, coconut oil, nuts, eggs, fattier cuts of meat.

With lower carbs, it is safe and useful to increase the amount of fat you eat. Saute some veggies in oil. It is tasty and will add calories. Also try some nuts.

Since I have been trying to eat lower carbs I am ending up with below the amount of calories than called for on the healthy lifestyle of Sparkpeople. I am a little afraid to even ask for help on that cause I will gain back the weight I've lost. I have been getting between 750 and 950 calories a day. Also have been reading books on diabetes control. I usually get about the same ratio of the protein and fat and usually between 50-75 g carbs. On those days I haven't been hungry to eat more than that. A couple days I have had a little more carbs and been hungrier enough to eat a little more.

Any ideas how I can get closer to the 1200 calories/day without gaining the weight back?
