Hi, I now living in a very small two room with bathroom suite in my DD basement. That way I usually have someone around sometimes . All off at university, school or work during the week. Now I have my eldest daughter and family over visiting for the weekend from the mainland. She will stay for a week to take me to some apppointments . All being so suppportive. SIL is hanging pictures and wind chimes for me. Feeling more like my home now. Cheers, Linda

Well done Ruthann. You sure did a good job. Eating sensibly sure does pay off in the end. I am trying to follow a new way of eating. It is hard to give up the usual comfort foods though.
Sharon, thank you for all that you did with this challenge, and though I was not online as in hospital, I thought about all of you doing this and wished that you all got good results , which I now see that you did. Congrats to all.

Good to see how well everyone is doing. I am in hospital. Had neck tumour removed Friday night. Very sore and only water and juice. Won't be much left of me soon. But hopefully get back into the swing of things . Thinking about all the good times you are having and just enjoy them while you can, as you just never know.

I am just so proud of Ruthann for being the Winner of our Challenge with her 16.5 lb loss.


And speaking of being proud


As a group we lost 90.7 lbs during this short 6 week challenge!

And, if you didn't notice -
This is our first challenge ever that everyone had a loss! (we started our challenges in 2013)
Many times I have challenged you to a no gain week but this exceeds my expectations!

And one last thing - thanks for all your kind comments.
As I've said many times, I need these challenge more than anyone.

Again....Marianne...so sorry...so late getting this to you.

Heather....that formula may work for foods with less sugar and sat fats...but with the new point system...it really is not the rule of thumb anymore. IE....a can of coke is like 8 points now..have no clue how many calories are in it. So...for real food...I suppose it is close enough.

Weighed in at home this am...and down....whew...too bad it couldn't ahve been yesterday! LOL!

We met my DS and BIL for dinner in Springfield [MO] yesterday. The side I chose was spaghetti squash - it was really good. I seem to remember the menu said there was some maple syrup seasoning and cheese. A whole spaghetti squash had been quartered and it is possible the quarters had then been halved as well. I suspect that was how it was baked. Anyway, I got a spaghetti squash dish in ! LOL

I know that WW's will not agree with me....LOL....but a real quick way to check calories on their points is just to take the points and multiply by 50....
It is not exact but gives you a close idea......
So in Mary's Egg Benedicts she knows it is 8 WW's points X 50 = 400

Marianne put it on the food tracker and got 365....so to me it is all close enough ....LOL

Thanks Sharon, for all the work you have done. I know I am again late and have the same excuse, sorry. It's down 3.2 for this week. I am thrilled the scale did an about face today and gave me a small loss for over the challenge. I have increased my eating to my calorie range and saw the loss. Guess I need to keep in that range for a while.

Like so many of you.........this challenge has been particularly hard for me for some reason. I didn't gain or lose this week...which in and of itself is a miracle. I ate horribly. I'm very unhappy with myself and maybe that is my problem. A friend pointed that out to me. When you are unhappy with yourself you don't do as well. I'm sure this is true. So that said, Sharon, I'm looking forward to the next one and I plan to be in a "happier" mood about myself!

Thanks, Mary. I put it through Spark's recipe calculator and came up with 365 calories - not bad for breakfast for DH. However, the sodium was pretty high, probably because of the Canadian bacon. I'll try making it for him and see what he thinks. emoticon

OH Marianne! I totally forgot.....glad I saw this...duh!

It is an english muffin light...toasted

I poach two eggs

i slice of Canadian bacon

Then for the sauce..

2 Tablespoons of ff sour cream, 1 Tablespoon of Dijohn mustard and lemon juice to taste. It is 8 wws points. I have NO idea on calories.

Down .6 of a pound this morning. Overall I managed to lose 1 pound for this challenge. But I do feel better and think I may have my head back in the game again. Now to keep pushing onward and downward.

Sharon thank for all you do to keep us motivated and fighting this never ending battle.

I'm down 0.4 from last week This represents a maintain from the 17 pounds I lost at Christmas which was my goal. Now I can move forward and keep eating smart. With such a large loss, I was not in the place I could manage another loss so soon, so my goal this time was to maintain. This has been great.

I do enjoy this team. It is a lively and happy tea. The members are busy and helpful. I will stay in touch during the break.

Thank you, Sharon, for the great recipes and putting the challenge together. I wanted to lose 5 pounds; instead lost 4. Very hard to stick to my food plan while traveling. emoticon We all deserve a thumb's up for sticking with this challenge.

TC, I haven't made the cauliflower crust yet - I ended up making onion soup yesterday. 2 T butter in the slow cooker and four large Videlia onions thinly sliced in the crockpot for 7 hours on high. The onions browned nicely. Then 2 quarts no-sodium beef broth, a dash of thyme and pepper, and 1/4 cup sherry for an hour. Croutons and/or cheese were added individually to the bowls just before serving so I could control my calorie count. Pete thought it was great. I have to put it into the Spark recipe planner to figure nutrition info.

Mary, I haven't forgotten that you said you had a healthy eggs Benedict recipe. My DH is under doctor's orders to lose weight and he loves eggs Benedict. Any chance you can share?

Now that I'm home I'm going to try to stick with what worked this week - tracking every bite and staying in calorie range.

Morning Ladies!
Well, the scale did not drop back down so I have to own up to a .6 lb gain this week. I think I did myself in when I lost 9.4 lbs the first week. From then on I struggled to maintain that loss. I find it strange that with my gain this week, my total loss for this challenge is 9.4 lbs. The good news is six weeks later and I did maintain that first week's loss.

I see several of us just couldn't get our mind into the game with this challenge. I need to take a break but I promise our next challenge will be a team challenge where we can encourage our team mates or kick their butts emoticon I just don't want you to not join for fear of hurting a team. If you are struggling (and most of us are), you need support more than ever.

I will be back in the morning for all the totals including total losses and where you stand in the pecking order!

Ugh, just read posts. Taking forever since I am so far behind and can not read more than 2 without a coughing fit. This flu stuff sux !! Temp 101.4 this am so will probably not meet my steps again today. That really disappoints me since that and my water intake are the 2 things I have been consistent with no matter what.

Marianne, I will be curious to hear how your cauliflower crust comes out. Mine was like a moist casserole and even more wet the next day. I much prefer the fat head recipe.

WG, That is strange about the Splenda. My niece and nephews eat the crap out of everything I bake whether sugar free or not which is funny because they are all young. 20's.Glad to hear the flooding is not affecting you yet.

Peggy, I do hope the doc can help your neck and hand and CONGRATS ! on the blue ribbons. Just goes to show you have some awesome talent.

It's hard to believe it's been 6 weeks already. I'm with most of the rest of you, I haven't been able to keep my mind in the 'game' this time. I did have an overall loss but not what I was working for. I guess I wasn't quite working it.
My mind is on too many other things. I e really slacked on my activity levels and have been stress eating. The bad thing about the stress eating isn't how much I've been eating it's what and when I've been eating. I did better most of this week but if course last was when I bombed.
Congrats to all who have lost in this challenge. We all know how difficult it is.

Good morning it is 50 here!!

I'm leaving at 7 to meet my two friends and we are driving to an Arts and Crafts show for our district Woman's club. I am bringing my baby afghan and my scarf that won blue ribbons at our show.

I have to be honest...I am higher than when we started. I feel bad about that...but trying to go forward from here. Those ups and downs are definitely something I need to work on.

Hoping the scale is as nice this AM as it was yesterday!! Pushed up into my cal. range and have eaten there the past 4 days. Seems to have been a good things to eat more!! Will know when I get up.

I am with you all and haven't had my heart into this challenge. I seemed to feel like more effort but I know it wasn't. I think I have just been too busy to really get my head into it. Well I went to the hand Dr. to find out my results of the MRI on my neck and he handed me over to the neck Dr. who is in the practice. First he had me get xrays of my neck

I have an appointment there on the 21st. and the saga continues

Good Morning. It is raining again. Finally the water caught up with the ground water and there is flooding in many areas around me. I've never had a problem, so hopefully not today either.

I'm up a tiny bit this morning. Have a small cold this morning. No appetite, so maybe tomorrow?

I appreciate you SS for all you have done for this challenge. It has been fun not only to work together on losing weight but to think about possibilities in eating. Some worked well and others not a good fit, but that is part of the fun, so try things on and seeing if they fit.

WHAT??? The scale moved the wrong direction this morning! Now I'm praying for tomorrow. One part of me is glad tomorrow is our last WI and the other part of me is nervous. I need the accountability more than ever in my current state of mind.

I haven't heard from Ruthann all week so I am wondering how she is doing with her weight with her and Lorraine running around and spending money! It's hard to be good if Lorraine isn't in the same place and Ruthann mentioned she hardly recognized her as she had gained weight. Ugh! We all struggle so much. Why can't we lose and keep it off??

The only thing helping me to keep things in perspective is that I don't want to have Alex giving up as he is doing really well~~

Sharon good going on getting the scale to head downward. I go on it today and did lose that 1# now hoping the other one goes before WI so at least I can be back to beginning challenge weight. I am not going tomorrow. Had to reschedule an appointment and it's at noon tomorrow. Very disappointed!! But those things happen. I keep following the pie stories. Not sure I want to try it but just may with all the comments!!

Got a call this afternoon that a friend had passed away back in Omaha. Really a nice guy.

A friend here fell yesterday when her knee collapsed and I went to see her today after getting a request to help find the right knee brace. She shattered the tops of both bones in the lower leg, (Tibia & Fibula) They don't know if they will be able to repair it or do a total knee replacement. Bad injury!!

Got the turkeys done and in the frig. Will be cutting them up for soup tomorrow. With the meeting and then game night, it's a full day with ordering and buying for the ice cream social and prepping the Sun. soup luncheon too. Both activities are this Sunday. A very busy one!!

Hi everyone. I'm busy today organizing again. There is always so much to do.

The electrician is coming today to give me a bid. I'm excited to be moving forward. Hopefully these next workers will be a bit more reliable.

I do love the stories about the coconut pie. I love Splenda. I use when I can. The kids aren't into artificial sweeteners so I will make most foods with the regular recipe and limit my intake (send it home.)

Morning!
I want to wash and wax the MH floor again today only instead of the Swiffer, I am going to get down on my hands and knees. That should give me lots of exercise for today.

I can't seem to eat under 20 carbs a day. My mind and heart just isn't in to it. Therefore, I told myself to stay under 100 carbs which is still on the lighter side. The scale is once again headed back down, just not the big drops any more.

This is our last week so make it count!

I feel "ick" today - I think it was Thursday of last week when I felt "ick" - wonder what it is about Thursdays? LOL We are also back to colder temps today, with very nice temps tomorrow. I am thinking grocery shopping, etc can wait until tomorrow.

I love reading all your posts....but I'm working a bit more than I want to this week plus we have grandkids events to attend. My boss and I taught two embroidery classes today and I stood on my feet for hours. I'm bushed!

PJ - you'll be happy to know, I NEVER use sugar! In the pie, I used Splenda baking which measures the same as regular but even then I didn't use as much as it called for. The heartburn may have come from something else Norm and I ate. I did notice the pie set heavy and we were not hungry the rest of the day - that's a bonus!

This afternoon for dinner I made a stir fry with chicken, stir fry veggies and cauliflower rice. Norm and I both enjoyed that as well as with regular rice. We had another piece of pie and I do believe we are all set for the rest of the day. Perhaps a Num Num Snack before bed emoticon

No heartburn for me Sharon. I will admit that I was surprised when I looked at your recipe and realized it had that much sugar in it and even more surprised you didnt subsitute another kind of sweetner. Since Frank is not much for it I probably won't make it unless I cut the recipe in half and go crustless so there wouldn't be so much for me to eat.

I have MIM spice done and have made some cream cheese frosting in frig using splenda instead of sugar to go with it. I do mine in a bowl then slice it in half and put the frosting in the middle as a treat and usually get to servings from it.

Hi everyone. I've gotten to the dog's bedroom today. It's really the spare bedroom, but the dog thinks it's hers. The little girl grandchildren make the biggest messes together or alone. The boys aren't nearly as destructive.

I'm glad the mock coconut pies are going over well. Nice to find a new treat.

It's rainy again today. I enjoy the nice weather and the melting of the snow. It has been a lot this year and the rain in the valleys means snow in the mountains which is still greatly needed.

PJ, glad you are enjoying the fishing and time you have. I know you like splitting the time between where you are and the next place.

Now to the next project. I've got a lot to get done.

@ Marianne...I forgot to say that I did not use sugar on my Mock Coconut Pie....
Because I only has 1/3 of the spaghetti amount....I used 1/3 cup of Splenda/ 1 egg/ and 1 tablespoon of low fat Becel/ added 1/2 tablespoon of lemon juice/and 1 teaspoon of vanilla...gave a couple of shakes of nutmeg and cinnamon ....and once all mixed added in the spaghetti....
It looked runny but as you can see in the picture when I took it out of the oven....it has gone solid....as you can see where I made my smiley face with the knife.... emoticon

@ Sharon~~ no neither Alex nor I got heartburn from ours...what about PJ? did she get any heartburn?
Alex and I are not prone to getting heartburn easily though....I have to have 4 slices of bread coated thick with peanut butter ( thick thick...some on all 4 slices~ ) then add chopped/sliced banana and make 2 sandwiches and eat *just before* going to bed!! THEN I will get heartburn!! emoticon emoticon

WOW~~ hard to believe I use to do that but I did *way* back in 2009 and before.... emoticon emoticon

@ Sharon....the pyramid pan ( mat ) worked fine...for what we wanted....we just cut up the chicken breast into oversized nuggets and laid them on the mat....too about 30 minutes in a 425F oven to cook them....
Next time though....I would turn the pieces over halfway through....just to *brown* the underside....( we did not bread ours )

ON You Tube there are lots of reviews....per usual some are picky and do not give a good review....others say it was worth the buy~~
One thing though~~I see on the Bed & Beyond site that each mat costs $14.99....I do not think they are spectacular enough to pay that....but we got mine for $6.53 each and free shipping on Amazon.CA ( your dollar is better than ours so you may even get them cheaper than that on Amazon.COM )

The pie recipe looks good and I like Heather's crustless option. I'm taking a break from sugar so will try the recipe with Stevia.

Yesterday I cut my spaghetti squash in half and cooked it my Instant Pot, a combination pressure cooker / crockpot. Within 20 minutes the squash was done. I had a serving with garlic and a sprinkle of low fat cheese - delicious. Sorry, no pictures.

Now that I'm home I'm going to try the riced cauliflower, perhaps as a pizza crust.

Heather, you crack me up ! Snow tree rings. That squash recipe looks good.

Mike is gone this week so I got mom yesterday and we went to lunch, shopping and walked the dogs outside. It was beautiful for February in IOWA...LOL ! Today was much colder but still do-able.

OMG ! Why did I wait so long to try soul bread ?!! It is awesome ! I was a baking fool. I made SF snickerdoodle cookies, SF brownies, the bread and SF mint chocolate chip ice cream. I am waiting for it to get a little firmer before I try it. I found an ice cream maker at goodwill for 4.88. It appears to work but I may not have froze the bowl long enough as it never did get firm so hence the reason for being back in freezer. Working next 2 days, then off 3. Happy weekend coming !

I made it to chiro yesterday also and feel better. Got a bill today from them which kind of makes me mad since I was there yesterday. I would have paid it then instead of wasting a stamp. I swear, some businesses are just not what they should be. Got some new wine club wines today and will try them this weekend. emoticon All for now. TC

emoticon Great picture of you and PJ Sharon~~your pie looks delish!!

I had some squash left from my meal last evening but it was only a bit better than one cup. So I decided two things~~make the Mock coconut pie with what I had...and two: to just make it crust less~~ ( to save calories )
So taking about 1/3 of the called for ingredients....and lining my pie pan with parchment paper....this is what I got~~It smells great even if it does not look great...LOL


And I have chicken cooking on my Pyramid Pan for our salad at supper tonight....

Good morning. It is rainy and cloudy here but the pollution is gone for now. I like that the snow is melting quickly. I love fresh snow but not the other stuff.

SS, PJ, the mock coconut pie wouldn't make it with me. Hate coconut so anything that reminds me of the taste/texture wouldn't survive. I do understand others who may love both. I'm glad you found a nice alternative.

Today is grands and cleaning. Had a mishap with the disposal and now need to put things away. Then it is time for something else, more cleaning, etc. I've got a couple of books I'd like to finish but it depends on how the grands are today. Some days they need to play.

Here is my review of the Mock Coconut Pie. It is more of a custard than a cream pie. It had a very good flavor but I'm not sure it tasted like coconut but it didn't taste like squash either. The squash seemed a little crunchier than coconut but in a good way. PJ and Norm both agreed it is a recipe keeper and said they would eat it again. I have to say Frank doesn't care for Coconut pie so one bite of PJ's and he said, yup, it's like coconut pie!



As you can see, we enjoyed the pie with a dallop of Cool Whip on top!

Today is work day. The MH needs some attention and then I have laundry to do!

PJ, I see from Sharon's post you are heading up north soon. Hope you have safe travels and good weather.

Got on the scale this AM and wouldn't you know it, down that pesky 1# + Must have been all the walking at the social yesterday. Or dumping the added fluids from ham's saltiness.

Had a meatloaf dinner tonight with a baked potato, wax beans and a jello salad. We haven' had that for many moons and sure did enjoy. Hope it doesn't show up on the scale tomorrow!!

The mock coconut pie sounds rather interesting. That's being said by someone not to fond of squash but willing to give it a try. Don't have the ingredients right now but will keep it in mind.

OK....looked up pictures of Mock Coconut Pie.....BUT my question is?~~Did it taste at all like coconut? emoticon emoticon

Had my Chicken Enchilada Spaghetti Squash tonight~~


This is the base....which I made ahead of time. Alex does not want the squash so he had his with some bagged cold slaw ( like when you make crack slaw )

When it was time for our supper...I divided this in two....then we each added our weighed out rotisserie chicken....Alex added his slaw to his and simmered till the slaw wilted down~~

I had cooked my squash ahead of time so added this plus the chicken mixed in it to the squash and microwaved it for about 2.5 minutes. Then added my Low Fat TexMex cheese to the top and microwaved another minute...


Love this meal and it only cost me 320 calories! ( I never count calories for the squash or spices that I added )

We drove up to Falcon Lake this afternoon to say goodbye to PJ and Frank as they will be leaving for Lake Sam Rayburn by Sunday. We didn't stay long but had a nice visit. I made the Mock Coconut Pie last night and took it with us to share. Frank only tasted PJ's and that was enough to know he didn't want a whole piece. The rest of us thought it was great. It is definitely something I would make again. I hope to post pictures but in all honesty, it looked just like the picture on the internet!

Just passing thru and wanted to say "hi". My eating was much better today and I feel so much better about it. No bloat. But I sure don't want any more of what I had last week!

We have ball games tomorrow night so I'm planning to take my food with me. Hopefully that will help on Sat WI.

Hi everyone. Had the family over for dinner. We did a "Superbowl" party with fruit and veggie trays and chicken wings and barbecue sausages. I also made hot rolls. It was great fun. The adults actually sort of watched the game. They aren't into football so it was a bit surprising.

This morning I'm down a bit from yesterday so I'm not going to complain.

Rainy and I've got "grandma duty" today watching the grands and picking up some from school. It sometimes happens.

Morning!
One of the long time couples here in the park invited us to go to lunch together and a drive. Of course, on a boring Sunday we accepted the invite. They took us to a restaurant that is very popular with our park residents which is Mexican/American. I ordered Mexican and my weight is up this morning from the restaurant meal, dog nab it! We drove around and because they have been coming over 20 yrs, we learned a lot from them. It was a fun day.

When we got back, while Norm was watching the Superbowl, I made the Mock Coconut Pie. It looks good but we haven't tried it yet. It was too hot!

When I headed to the bedroom with Nala, I thought the Falcons were going to win and I was bored. Imagine my surprise when Norm came in and told me the Patriots won in overtime. The second half must have been exciting!

Today's exercise will be painting, seems to be my favorite thing, no not really, I just get paid to do it. I guess I should look at it this way, "I'm getting paid to bend and climb".
