I make vegan chili and lentil soup, put them into single serving containers and freeze them. Making a lunch is easy since all I have to do is take a container out of the freezer, add some fruit and fresh veggies like baby carrots or celery, and lunch is done!

You also can make tacos using corn tortillas instead of flour. Use 2 tortillas per taco since they fall apart pretty easily.

Rice bowls offer a lot of variety. Just by using different spices you have different meals. Here are a few ideas to add to some rice.

* soy sauce and peanut butter for a Thai style dish

* beans and taco spices for a Mexican style dish

* vegetarian gravy

* tomato sauce

Don't forget to add your favorite veggies.

I am looking for good vegetarian lunch ideas that can be reheated in the microwave at work. I have grown weary of eating lunch out everyday, and I would like some options for a warm lunch. I really liked the burrito bowl idea recently posted.

- this is super tasty. In the picture it's served on noodles, but you can also go without.

You could also do:
curry potatoes
curry lentils
really any sort of vegetable curry
5 bean salad (very filling)
baked marinated tofu
roasted veggies
black bean soup

(this is basically my favorite ever)

We batch cook once on Sunday and separate our meals into mason jars for the week. all of these would keep well for the week.

I am needing some lunchtime inspiration. I am trying to eliminate wheat from my diet, which makes a lot of my old stand-by lunch ideas out. Any ideas other than salad?

I know that God won't give me more than I can handle. I just wish He didn't trust me so much.
