Hard to believe July 4th is only 2 weeks away. I need to sit down & PLAN! Just because something is low fat, etc. doesn't mean it's healthy. I'm looking for great nutrition.

Saute' onions, mushrooms, peppers & what every else I have. Add garlic & spices & balsamic vinegar.

carrots, peas, onions in a home made turkey soup from my sister (not sure what else as I didn't make it)
cabbage and carrots (in a pre-shredded cole slaw mix)

Green Beans, Cabbage And Broccoli top 3
Could not live without onions, Squash, Brussels Sprouts, Carrots. Celery Bell Peppers, Tomatoes.
I enjoy lots of vegetables including the starchy ones.
Potatoes, Rutabagas, Butter Beans,Garden Peas, Pinto Beans, Blackeyed Peas, Great Northern Beans, Navy Beans, Black Beans and more.
These are all in my kitchen now except for Rutabagas.
I only buy them when I can find small ones. The large ones are difficult to cut into cubes as I like them.

I have too many veggies I really like. I especially like squash, swish chard, sweet peas, red & yellow peppers, spinach, red cabbage, romaine, onions, carrots, egg plant--I could go on and on. Guess I love veggies.

It's hard to pick a favorite veggie. Right now, I'm eating lots of lettuce with tomatoes, carrots, cucumbers, etc. I've also been eating an apple every day.

The first Friday in February is heart awareness day. Wear red and spread the word!

I love vegetables too! This week I'll be eating spinach,turnip greens with diced turnips and onions seasoned with red peppers and great northern beans cooked with ham.
I cooked enough Sunday to last a week...it simplifys my menu...:D.
Trying to cook something "Different" every day was keeping me stressed so I decided to simplify things a bit! I eat 1/2 medium apple for dessert or snack.

Having to pick favorite veggie is like choosing your favorite child! lol

Right now, one of my favorites is brussel sprouts. I found a super good recipe, sauteed up w/onions in a touch of bacon grease (or pancetta). OoLaLa! I also make a small batch of mediterreanean fingerling potates (diced) and mix the two. It is just heavenly!

I also have a Ratatouille recipe that I put over spaghetti squash. My DH eats it over pasta. It is full of diced squash, eggplant, tomatoes, etc... and is SUPER delicious. I couldn't get enough of it. I have this one posted on one of my blogs.

Almost forgot! Sweet and sour sauteed purple cabbage is amazing. Since I started my new vegetable diet, adding new vegetable dishes to my diet, I have found all kinds of amazingly delicious recipes. I haven't posted it yet. Think I'll go cook some though.

Sometimes a different preparation method is all you need for veggies. My kids didn't like zucchini and summer squash when it was sliced, but loved it when I shredded it!

I grew up thinking I hated broccoli, but that was because my mother always served it in cream sauce. I was an adult before I tried it steamed and I was suprised at what I had been missing.

I never put squash in my spaghetti till a few years ago I went to a health class that served us lunch. After that I have been adding yellow squash to my spaghetti ....yummy!

Your squash sounds yummy! I struggle to find veggies that my teen daughter will eat and unfortunately squash is not on her list. She loves broccoli but is not very interested in much else. I did get her to try roasted fennel last week.

I love squash also. I cook yellow squash with finely sliced onions,a small tat of butter,&a chicken bouillon cube for flavor, cook until all juice is very low,mash like potatoes....mmmmmmmm,it's good!

I love squash. Winter kinds I bake. Summer squash like zuchinni I put in soup and stew. I like lettuce, romaine. Tomatoes, spinach, onions, garlic, cucumbers, carrots, sweet potatoes. Cabbage in casserole with tomato, green pepper, and onion.

this moment is all we have, so do the best you can to appreciate it!

Today my lunchtime salad had red leaf lettuce, spinach, basil, dill and parsley. I had a sliced persian cucumber for a snack this morning. We're grilling corn with our dinner tonight.

I like all veggies,no exceptions. Garden raised, organically, and local are best. I learned a new word recently, but it's not new to others, apparently: Locavore (one who eats food grown locally, in season)
