In my studies today - came across this explanation of testing foods that might be OK for you to eat but would spike others blood glucose...Sharing it because I needed the encouragement and the method of a phrase I Often hear among diabetics "Eat to the meter"

EAT TO YOUR METER
(Suggestions for using this technique to create your personal safe foods list.)
Write down the date, food, time, and reading at each test.

1) Test just before your first bite.
2) Test again an hour after your first bite. (Expect a higher reading.)
3) Test again after another hour. (Ideally this reading will be lower than your second reading, and this food is safe for you to eat.)
* If your 3rd reading is higher than your second reading, test again each hour until it starts to come down. The food you ate should be removed from your diet. You can try testing again on another day to ensure your higher reading was caused by the food, but if you have similar results, that food isn't good for your body.
* If your 3rd reading is the same as your second reading, test each hour until it starts going down.
High blood sugar readings for long periods of time can result in organ damage, loss of vision, severe infections, foot amputations, and other serious problems. Eating a low carb high fat diet can help you avoid these problems.

Was just diagnosed pre-diabetes today. It's not really a surprise. And I know what I'm supposed to be doing. I Commute long hours, sit tethered to a desk, and have all kinds of other excuses for eating crap and not exercising. Trying to go vegetarian. Today is a new day.
