WEEK 4 (Jan. 22-29)

1. Since it is the New Year, I chose an article from Spark for Resolution Solutions! All you have to do to get the points is read the article!

When I have time, I make a slimmed down version of a Breakfast "Burrito".

Breakfast "Burrito"
1 Fat Free tortilla
1/2 Egg beaters
1 Tbl Chopped: Green Pepper, Onion, Mushrooms
1 Tbl Fat Reduced Shredded Mexican CheesesSalsa

Spray pan with Pam, saute veggies, add egg and scramble. Warm tortilla in microwave, put egg/veggies mixture in center of tortilla, sprinkle cheese on top, wrap. Rewarm for 10 secs. Spread 1 T of salsa on top. Enjoy.

Poultry Breakfast |
Ingredients
1/4 C egg substitute (I use Kirkland)
1 large fresh mushroom sliced thin
2 tbs chopped onion
1 tbs chopped red pepper
1 tsp smart balance light marj
1 slice fat free cheese
Directions
saute onions, pepper, and mushrooms in 1 tsp smart balance. reduce heat to low and add egg. Cook to desired consistency add cheese. (I add DASH [tomato and basil] seasoning). Any other seasoning you like.

Poached Eggs

- Use a pan that is at least 3-inches deep so there is enough water to cover the eggs, and they do not stick to the bottom of the pan.
- Crack an egg into a saucer or small bowl.
- Bring the water to a temperature of about 160-180ºF
- Do not add salt to the water. It will loosen the whites.
- Slip egg carefully into slowly or gently simmering water by lowering the lip of each egg cup 1/2-inch below the surface of the water.
- Cook 1 1/2 to 5 minutes, depending on firmness desired.
- Remove from water with slotted spoon and place on paper towel to absorb excess water.
- Serve on toast if desired :)
