This has been really fun. I have been bringing healthy lunches for a while but it's nice to share.

Today was late lunch day so my AM snack was 1/2c each of grapes, grape tomatoes and baby carrots (about 12). For protein I had lowfat string cheese. (I have to avoid nuts for a few more weeks-excluding my family and spark friends!)

Then I went to a lunch meeting at MiMi's cafe. This is usually a hard place for me because they have the carrot bread and sourdough rolls and other very fattening favorites. My friend ate quiche - full cream and eggs and crust etc. I had 3 oz grilled salmon and salad with 1 tsp of balsamic. I didn't have a bite of her muffin and turned away the bread! YAY!

Thanks again for all the chatting and support Congrats on the weight loss everyone. My stomach probs are almost resolved and I am sure the scale will move soon (trying not to weigh myself every day!)

Hello everyone!!! Deb, I'll miss this forum too--but I trust that we'll all continue preparing healthy lunches for the rest of our lives.

As I've challenged us to make this day the best, Deb you've outdone yourself :) Your lunch today sounds so yummy. Do you mind sharing the recipe?

As for me, I tried a new recipe called tuna and 4 bean salad--a variation of SP's tuna and white bean salad . It's tuna, diced onions, red bell peppers, three-bean salad, black beans and balsamic vinegrette dressing--on a bed of romaine lettuce, served with warm whole wheat bread. Snack consisted of pear and Quaker Chewy bar (peanut butter & choc chip).

Oh my goodness--it IS almost done! I will miss it--good to focus on this healthy habit, and I've enjoyed talking with you all!

I'm having a Slavic favorite from my husband's family, which I can't spell--"halupskie" is what it sounds like. It's cabbage rolls, made with ground beef, brown rice and tomatos--they're pretty good. Also, the last of some great pineapple, and whole grain bread--and tonight, it's back to the store!

Hello everyone!

Sorry for not posting yesterday. I got caught up with work--month end reports, etc. Our department head is in town this week and he took our team out to dinner last night. We went to my fav Japanse restaurant. I finally got the courage to try sushi. The tuna sushi was okay. I can't wait to try sushi again.

Today's lunch was leftover dinner--Pangnan Chicken (chicken breast in a delicious coconut and curry sauce) served with white rice. Snacks included 2 tangerines and a pear.

Oh, sorry....Monday's lunch was a small baked potato with broccoli, onion and cheese and green salad. Snack included an apple, orange and pear.

I'm certain that preparing healthy lunches has contributed to my weight loss success this month. A total of 8.8 lbs gone forever. I've done much better this month than last month which was 5.8 lbs.

The challenge is almost done, so let's make the last day the best.

Good day today - I had my spinach salad topped with hummus and pita bread. Then grapes and string cheese for my first pm snack (lunch was at 11) I will have yogurt w/ground flax now while I get dinner in the oven...

I had some good homemade chicken and brown rice soup--good and even better when you've been sick! With an orange it was great.

Then I had a South Beach Bar just cause I had it...not a calorie problem, but I am not getting more of them when they're gone--too much fake food.

Healthy snacks otherwise--banana inthe morning, whole grain english muffin and peanut butter for my 3:00PM drop into starvation danger-zone. That really helps me make it till dinner!

Hey Tisha, You really are doing great! I have had to do that on days when I have a late lunch and forget my snack. I usually go to the kindergarten rooms and get goldfish crackers - ugh!

Friday was my Thai food extravaganza with my work buddies and I ate healthy at home all weekend! YAY!

Today was my basic spinach salad with some tabbouli and chicken salad on top. Then string cheese (lowfat) grapes and yogurt for snack.

Hi everyone! Hope everyone is enjoying the weekend.

Yes, Kate and Deb, my colleagues thought that it was hilarious also!! Some found it strange that I would 'bum' lunch when I usually bring healthy lunches and snacks to work.

But the more I think about it, I feel so proud that I mustered the courage to do that. Before I started this journey and losing weight, I did not have the confidence to do what I did. I'm so proud of me. Woohoo, me!!!

Yesterday's lunch was Bahamian style: chicken souse (boiled chicken w/whole allspice onions, hot pepper and lime)and Johnny cake (bread). Snacks: orange, apple and grapes.

Larry--if you're over on your calories one day, or worry that you might be, you could also freeze the lunch for another time! So it wouldn't go to waste...or to waist! (Groan--sorry!! Couldn't resist!)

Good morning all. Healthy lunches are great. i have one just about every day. We have meals-on-wheels bring my wife a meal each day and they bring it just about lunch time. If she will not eat it or does not want it for some reason, I will. I do not like to have food go to waste unnecessarily. And to throw this away would be a waste of tax-payers money. I made a boo-boo today. I was runnung late this morning and forgot my lunch at home. By the time I got to the cafe, they were sold out. The next best thing was to walk around the office begging, "does any one have food? Food anybody?" Finally I managed to bum a cup of fruit salad, a dinner roll, six saltine crackers and a kashi cranberry and almond bar. Yes, it wasn't healthy but it carried me over to dinner--a very healthy one by all means.

It's an early lunch for me today and I get to come home - YAY! I am eating my many salads...Spinach salad (w/mushrooms, carrots and sun dried tom.) Topped with Tabbouli (parsley, cilantro, chopped tomatoes and couscous) and chicken salad made with olive oil mayo. I do SP while I eat so it takes longer and I eat less!

I will eat chopped mango for dessert and then I will probably have yogurt for my pm snack.

Keep up the good work everyone!

Hi team, I definitely stay away from food I don't like and learning to stay away from unhealthy food also.

Today's lunch was a big bowl of tossed salad (romaine, tomato, red bell pepper, onion, purple cabbage, grated carrots) and 2Tbs creamy Italian dressing. Snack included one small bite of delicious Swiss chocolate, banana and apple.

I went light on lunch as breakfast was heavy.

I haven't figured out how to handle the office potlucks yet. Everyone is proud of what they bring, and I want to share it all--but most of it is totally high in everything I don't want to eat. I think I managed to stay at a spoonfull today, and under calories...but then the rest of the day is tight...Aaagh. At least they're just once a month!

Back to my chicken salsa and brown rice, and spinach salad and sweet red peppers...grapes and--whoops, I'm out of other fruit! Have to do double grapes!

I was one of those raised to stay at the table until my plate was clean. I have spent years working on that one issue. I don't make my kids clean their plates (OK I make the do dishes tho!) but for a long time, I would eat whatever they didn't. I am working on that now. And I serve us all smaller portions so if we want more we go back for seconds but there is less waste that way.

Lunch yesterday was spinach salad with tabbouli salad and chicken salad. I mixed everything together and didn't need salad dressing and it was very filling.

I had an apple and lowfat string cheese for my first afternoon snack (lunch is early) and a yogurt after I got home.

I should shut down my computer and go pack today's lunch right now.

Good afternoon all. My wife is on 'Meal-On-Wheels". The lunches are delivred around lunch time, and if there is something she does not like or want, I usually end up eating it. Nothing goes to waste. Today they brought beef liver, mashed potatoes and fried cabbage. Neither one of us likes liver. I did learn to eat liver when I was in boot camp because I was hungry. We do not usually eat this cut of meat primarly because of the flavor. Now are there any foods that nobody else likes? Larry

Hello team, sorry for being so scarce lately. I've had an eventful weekend. My mother was admitted to hospital on Saturday. She is getting better. I hope that she'll be discharged soon.

I'm so pleased that you're continuing with packing healthy lunches. Congrats!!! I'm so proud of you!

Yesterday, I had leftover lentil soup and yogurt and grapes for snack.

Today, lentil soup again, green salad, tangelo and apple.

Lunch today was 2 oz bbq chicken basted with a low fat mango vinagrette, with 12 asperagus spears, .5c green beans and 1\3 cup basmatti rice with gratted mango and cilantro - MMMMM very tasty!

snacks: Morning - med. banana
2pm - apple, 6 small pretzels
4pm - half mango, half grapefruit

Tommorrow - 1c. left over pasta, with celeri sticks and possibly a small salad.
Snacks - apple, plain yogourt, maybe some red pepper slices?

Getting back on track after #1 while trying for #2!

I made up a big batch of Southwest Black Bean salad last night, to use with my spinach salads=--I love it. BUT--I'd never been able to figure out my food processor, and my husband showed me how--and I went wild with onions, and ruined the whole thing!

So it was slim pickens at lunch today! But I have some great slow-cooker salsa chicken and brown rice already in containers for tomorrow and later in the week--which makes me very happy! emoticon

Big potluck on Wed...danger zone! But I think I'll do fine. Gottas make the choices...

Sherry, I am like you - the more processed the food, the less nutritional value, which means more empty calories too. I try to cook extra on the weekends for lunches and dinners, canned chicken or tuna with lf mayo (kraft olive oil mayo is great!) add chopped green onion, celery etc. super easy and healthy.

I was so good packing lunch today, made tabbouli yesterday so I mixed that with my spinach salad and some chicken salad. But then I ended up having a student observe me for the day so we went out to lunch. Half a salad and soup so I did OK I didn't realize that the tomato soup was made with cream. Anyway at least my lunch is already made for tomorrow!

The sweet potato was really good.I got the recipe from a magazine called Natural Solutions.I will definately make it again.
I'm sorry but I can't help with frozen dinners because I won't buy them.They are full of preservatives and chemicals.I usually set aside one day a week that I cook alot of meals and then freeze them.I know what's in them because I make them myself.It's much more economical too.I buy beans,chicken,turkey,and grains in bulk at the health food store and make my own frozen dinners.I'm going to try to make the sweet potatoes and only par cook them and then freeze them too.I'll let you know how they turn out.---Sherry

Man, that sweet potato sounds good!

I will be off the the grocery store in a bit, to get prepared. I am considering doing some frozen dinners for lunch this week, along with a salad and fruit, etc for snacks ( I get hungry!) But somehow I can't believe they would be as healthy. Any opinions gladly considered.

Hi Everyone,
I'm sorry I haven't posteed for the last few days but I'm having problems with the computer.Thank God it is still under warranty.Here are my lunches for the last 4 days plus today.
4/16- fresh veggies and light ranch dip
4/17- baby greens salad with light Italian dressing and 2 plain unsalted rice cakes
4/18- leftover brown rice and lentils
4/19- tuna/mac salad made with whole grain pasta and Kraft olive oil mayo instead of the regular one.I also added a touch of mustard and diced onion to it.
Today,4/20- I had a large sweet potato seasoned with cumin,chili powder,garlic powder and olive oil,cut into wedges and roasted in the oven-Delish.
I will try to report every day now that my computer is fixed(I hope).---Sherry

I am excited to tell you about Fri lunch. This has been a tradition for five years - a group of wonderful ladies and I have lunch at a friends restaraunt. There are usually 7 but many times old friends surprise us. We order family style - thai food. The owner has become a good friend and opens early for us each week, she customizes dishes so we get the most vegetables, the least fat and calories! It is a wonderful reward for the hard work we do every day. And my reward for working so hard to plan healthy food and stick to my plan.

Tracking was very difficult at first. But after talking to the owner, researching recipes to find one with similar ingredients here is what I've done: estimated the quantity of food (6-8 large shrimp) and veg. Then I chose the dish that had the highest calories and found a recipe on sp that had similar ingredients and estimated the portion. The whole meal is estimated at 400 cal in my friday lunch grouping. The restaraunt owner felt that that was high, so I am hoping she is right.

I am practicing using chop sticks for my China trip this summer so I eat much less and still get all the rewards...

With the grocery store--I buy generic brands for many things. But I need to work on the saving time and money stuff, and I go almost every day--another challenge!!

Lunch today will be leftover chicken rosemary that I portioned up after the other night, and a spinach salad. More fruit as snacks--I realize that eating the South Beach Protein bars for snacks has cut into my fruit in-take.

You're right! Deb. Ordinarily, I do not cook Stove Top Stuffing as I prefer to make my own--it's healthier. However.....I ran out of bread and had to--no--and chose to use the packaged 'stuff'. Not a good choice but that's what I did. I will do better next time. Tomorrow is grocery shopping day.

Ordinarily, I try to stay away from the processed food as they are either high in sodium, sugar or fat.

I do believe that going to the store and having the right things on hand--whatever the right stuff is for you--is one of the biggest supports of healthy eating!!

I'm running out of food. I really need to restock the pantry and freezer.

Today's lunch menu:
Leftover grilled chicken breast
steamed broccoli
Stove top stuffing

Snack: tangerine and a Quaker chewy bar

Here's a healthy budget tip:
-When soaked and cooked, dry beans triple in volume. A one-pound bag will make six one-cup servings.

Yum, Tisha--grilled vegs are my favorite!

Today I'm having grilled chicken breast (2 oz) leftover from last night--made extra with that in mind.
Spinach salad again, and cucumber slices
Last of my red grapes today--they were sure wonderful!
An apple and South Beach bars for snacks.

I eat with people once or twice a week, because I know it's good for stress relief, but my favorite treat is eating at my desk, and doing Spark People--that's a refreshing and motivating break with lunch!

Good evening, team, everyone is doing a GREAT job of planning and preparing healthy lunches. Congrats!!!!

I packed a delicious and nutritious lunch bag today which included:

Lunch-
*Grilled, rosted garlic chicken breast with fresh rosemary and basil
*Grilled veggies (carrots, onions, tomato, zucchni)
*Baked Yam w/1/2 tsp butter

Snack - 2 tangerines

Today was late lunch day for me...but i brought a low fat string cheese and a cup of mango chunks for a snack.

Then I met my friend for a shrimp and broccoli thai stir-fry with rice noodles - healthy and good...and we shared one order!!! OK we had egg rolls but they are very healthy and fried in sesame oil (I know the owner of this restaurant) So I got a yummy treat..

Wow Sherry--that was filled with lots of veggies, and yet so tiny on the calories!

For lunch today:
grilled pork loin/chop, leftover from last night
baby spinach salad, with cucumber 'chips' and salad spritzer
aprouted whole grain toast

snacks:
seedless red grapes, grapefruit, and probably South Beach protein bars.

Though I'm wondering if I get a "sweet addicion " rush from those protein bars... They do help me stay full, though. From yesterday's lunch to dinner was 7 hours, and I'd never have made it without a protein snack.

I have a slightly different lunch every day...depends on what's in the fridge - but my lunch time varies and I am at a different school each day (Wed and Thurs I get to come home for lunch!)

Today: 1c baby spinach
1/2c shredded carrots
1/4c sliced mushrooms
6 pieces sun dried tomato
2 oz grilled salmon
2 tbsp hummus spicy cilantro
1 trader joes flatbread.
I get a diet coke (one can down from 32oz)

Snack will be grapes and string cheese that i can eat in the car as I travel to the next school...

4/15: I'm packing some Slow Cooker Beef Stew, a Spark Recipe from TIFFANYWARD. It's low in fat and high in protein. I'm planning on taking a salad with it as well to increase the carbs to come up to the ratio that SP recommends.

It is a food for life plan where the calories you eat are broken down to 40-30-30. 40% carbs - 30% protein - 30% fat. 4 grams of carbs equals 1 calorie, 4 grams of protein equals 1 calories and 9 grams of fat equals one calorie. Today I have and apple, strawberries, grapes, almonds and cottage cheese.

I can tell you that up until now I bagged lunch & would bring a frozen entrée, a salad and a small Chocolaty Rice Krispie treat.

Some of you have taken the Quick Poll, "What are your brown bag lunches like?"

I've noted that 50% pack healthy lunches and 10% are improving. Overall, there is much room for improvement. Let's improve these numbers as a team.

Everyone is engouraged to participate in this challenge, for the period April 15-30, by sharing what you pack/have for lunch. Feel free to make suggestions; share with the team what you think could be improvements to your habits and how to make lunches more interesting. Kindly post your observations about what you've learned and any challenges you face with preparing healthy lunches. I expect for this to be a fun, learning experience.

OPTIONAL: To make this challenge even more interesting, try something that SparkPeople has become fond of around the office: plan healthy lunches with co-workers. Start a “lunch club,” where every person prepares enough healthy food for the other participants once a week. This will add variety into your lunchtime and takes the pressure off being forced to come up with something healthy to eat every day.
