I am in the process of building some shelving units and cabinets in my spare room to organize all of my craft items.

We are going away for a small vacation later this week so I am also getting ready for that.

I'm finally caught up making Afghans for everyone else and the beanies for the Preemie babies at the hospital. Now it's my turn to finish Afghans that I started and had to put aside. I have a few ideas for patterns running around in my head that I hope to try in the near future. I've about exhausted my supply of yarn. I remember a question a while back that asked { Can you ever have too much yarn?] My answer is NO.

This is my new favorite recipe:

Eggplant steaks
Slice the eggplant and salt, then let it drain the bitter juice from it and let them stand for 30 minutes.

Then fry in coconut oil or coat a cookie sheet with coconut oil Dredge the steaks with almond flour and them bake or fry until tender. Season with salt and serve

It was one one my resolutions for this year: make a real dent on my stash before buying any more supplies, so I've been making a few cards and scrapbooking layouts with my existing supplies (so far I only bought glue and, well, just a couple very nice paper packs...) This week I want to start making cards for the upcoming March birthdays.

As to cooking, I bough Portobello caps, and I'm not sure yet what I'm going to do with them, but if they end up being something tasty I'll share.

I'm hoping to start (yes, start) my 2012 scrapbook this week, so I'll have to do a page with scraps.

My food goal this week is to try a new recipe or two, so I'll let you know how that goes!
