thanks for the Ideas, how long do you cook. I blend the raw greens with fruit in a hi speed blender to make green smoothies Thanks mike

I, too, roast beets in the oven. If you place the beets together in a Dutch Oven with a little water in the bottom of the pot, no foil is needed. The lid of the pot seals them in.

Wrap in foil and bake like a potato. After they are cool, the skins slide off easily. Slice and enjoy. Delicious!

When I make fresh beets, I put them whole in water and cook them on the stove until done. I check them a few times by poking with a fork to see if they are tender. I usually cut most, but not all, of the greens off before cooking. They will "bleed" if you remove all the stems.
Then rinse in cold water and let cool somewhat. The skin will come right off. I quarter them and then put a little butter and pepper on them and eat them warm. So good!

Hi I want to use beet greens but not the beets and my wife like beet but doesn't know how to prepare them. is there a simple way to prepare them. I don't want to throw the beets away thanks Mike
