Orange Walnut Spinach Salad (makes 6 servings)

1 (10 oz. bag spinach leaves, cleaned and stems removed
1(11-oz) can mandarin orange segments, drained and liquid reserved
1 red onion, thinly sliced
1 1/3 cups Walnut pieces, toasted
1/4 cup red wine vinegar
2 Tablespoons olive oil

1. Mix spinach, orange segments, onion and walnuts in large bowl.
2. Whisk together vinegar, 2 Tablespoons reserved mandarin orange liquid and oil until blended.
3. Pour dressing over salad, tossing to coat well. Serve immediately.

Hominy-there are two types: whole and ground. The former is the kernel of corn with bull removed; the latter, the hulled kernel, ground, is referred to as grits or pearl hominy. Dried hominy increases twice in bulk when soaked; soaked hominy may be purchased in bulk or canned. For variety, saute or fry thick slices until brown and crisp.

Black-eyed peas are one of the foods I really enjoy now but did not like as a youth. It is interesting how our tastes change throughout the years.

Imagining myself as baby new year I would look like this...

Hoppin’ John is a traditional New Years dish from the South fixed with black eyed peas, but it is traditionally fixed with bacon or ham. Black eyed peas are thought to bring prosperity and good luck. So we are having fresh black eyed peas made with onions and celery.

Speaking of nutrients, Dr. Joel Fuhrman recommends eating GBOMBS every day. Greens, beans, onions, mushrooms, berries and seeds.

Dr. Michael Greger recommends his daily dozen: beans, berries, other fruits, cruciferous vegetable, greens, other vegetables, flax seeds, nuts and seeds, herbs and spices (especially turmeric), whole grains, 5 10-oz beverages (especially water), 90 minutes exercise, vitamin B12 and vitamin D. He has a phone app called Dr. Greger’s Daily Dozen which allows you to keep track of which categories you have eaten from each day and the recommended servings in each category.
