I fell in love with this flavor the other day when I tried out some Larabars for the first time.

Because their ingredients are so simple, I decided to look online to see if someone had made anything similar.

and I must say it's a pretty darn close match. I rolled my dough into energy balls instead of flattening it out and cutting into bars like the recipe demonstrates.

I also used 2 drops DoTerra peppermint oil instead of using peppermint extract. 2 drops was plenty - could maybe go with three if you really want it extra minty.

But if you like Larabars, try checking online for recipe replications since those things are expensive. Making your own is far cheaper, plus you can control what goes into them (not that Larabars are full of suspicious stuff.)
