I made myself a nice salad last night to have today. I was going to buy tempeh and marinate it, but they were actually out of tempeh so I settled for their pre-seasoned smokey 'bacon' flavor. It actually might go really well, I'll let you know! My salad has the usual fixings plus the tempeh, avocado and black olives. I also packed some almonds and an apple for a snack.

It's slim pickins' in my kitchen too, so today for lunch I'm having a frozen burrito and an apple.

I am trying to be very attentive to my eating this week since my marathon is Sunday - I need to be attentive to healthy nutritious foods and not skimp on calories but not eat junk either! For lunch today I have butternut squash, rice and black beans. I didn't notice until yesterday that I am low on quinoa and brown rice, so I am having white rice. I was listening to a podcast the other day and they talked about white rice being lower in arsenic so maybe that isn't such a bad thing, and carbs might not be bad either before my race on Sunday so I am not going to stress about it.

Lunch today and yesterday will be a sandwich, a few left over chips, some dried fruit and almonds. I don't usually pack sandwiches for lunch from home, but we grocery shop tonight and this is what I had on hand so I will make it work!

The other day my work was so stressful that I neglected to eat my Brussels sprouts and sweet potatoes! They are still in the fridge. I eat when I am bored, I don't eat when I am stressed. Yesterday I had lunch with the president of our company...he had lunch for five of us who were celebrating 10 years of employment with Caterpillar Financial Services. Anyway, there was stuff for salad and it was very tasty!

After my race today I didn't really eat a full meal....just some date rolls.

At the last minute I decided to go to a boot camp type class last night but despite that I managed to roast some Brussels sprouts and sweet potatoes for lunch.

GLORIA, I hope you had a bit more time to yourself last night!

My salad yesterday was really, really awesome! I'm excited for today's! It is almost the exact same thing. I made tempeh strips and marinaded them in broth and poultry seasoning. It is great on a salad!!

I got home so late last night that I didn't have time to prepare anything for today...so I just sauteed some spiralized zucchini and put the tomatoes on it. I know I just had that and I try for variety...plus, no protein there but my serving is huge and it will stick with me, especially since I eat nuts through the day, I won't be hungry. It's really an easy fix for times when I am rushed, which seems to be pretty frequently. Maybe tonight I will have time to fix something more substantial!

Oh, Cava sounds so yummy! My kind of place! I checked them out and there are several in and around DC so maybe when I am there for my race in two weeks I will eat there! I looked at the menu, and seriously, maybe I would eat there EVERY DAY! Haha!

I've just been snacking today instead of a formal meal...I got some pumpkin spice date rolls at the store, oh so much yumminess there. I think I need to go back and get more.

I hear you but cheese is so yummy! They do say it's legit addictive and I think it's true.

Today for lunch I went to Cava, one of my favorites. (It's sort of a Mediterranean version of chipotle.) I got super greens, brown rice, lentils, falafel, hummus, tzaziki, cabbage, onions, cucumbers, tomatoes, and feta, with a pita on the side and a teeny bit of lemon herb tahini, technically a salad dressing, For dipping. Seriously my happy place!! But it does add up to 500-700 calories depending on toppings so I try to keep my obsession in check.

My husband picked a steak place today. I just ordered veggies, a sweet potato, asparagus and broccoli, but where is the protein? He went to this very expensive place that has little for me and he ended up ordering just a hamburger! Hahaha! Well, the portions were good sized so I have asparagus and broccoli left over for later. He ordered fried cheese curds too, off limits to me because not gluten free but I did try them (I hope I don't regret that) and they were good. Cheese anything please! I need to cut out the cheese (how many times do I have to say that before I convince myself?).

Mmm pumpkin yogurt sounds lovely!!

Lunch Friday was over night oats with pumpkin seeds and raisins.

Today's lunch was a stuffed portabella mushroom cap. It was wonderful! It was filling, but not lasting so I just had a smoothie for a snack (no protein powder or anything, just fruit and greens).

I've always been too lazy to buy a whole head of cabbage if I just need to chop it. :)

Today I had a boca veggie burger and some leftover roasted potatoes and butternut squash, and then some grapes.

Lentil soup sounds splendid! I wish I could find pre-shredded cabbage. I don't really like the way cole-slaw is, not really what I want for soups and stir fries, but that might work. I for some reason always make a mess of cabbage when I cut it. Maybe I need a better knife.

Anyway, lunch today is yogurt. It isn't plain yogurt either! It is pumpkin yogurt and I will add granola. I am going to find a recipe for Greek yogurt with pumpkin so I can make my own instead of buying sugary ones - although I don't eat as much yogurt as I used to.

YUM we've been making a fair share of soups lately too! They are handy for leftovers!

I made a giant crockpot of lentil soup this past weekend, so lunch and/or dinner every day is lentil soup and salad. The soup turned out pretty well. TONS of veggies - onion, carrot, celery, potato, veggie broth, lentils, split peas, herbs de provence, and spinach and parsley added at the end. Half of it's in the freezer already.

I am having veggie stir fry with tofu and "peanut sauce" today. You all have inspired me to have peanut sauce but I didn't have time to cook anything up, was in such a hurry, so I just threw some powdered peanut butter in there. Wish I had added some pepper flakes and ginger, that would have been easy enough. But it is still yummy and I will enjoy an awesome lunch!

I was able to run out, but by the time I got to get away I was STARVING. That lead to impulse choices. Naughty impulse choices and the consequence was in the scale this morning!

I've packed overnight oats with blueberries and raspberries for lunch today and some almonds for a snack. Much better than yesterday!!

We make our own in the summer, but I just haven't found a way to swing it during the school year!

Yesterday I had a cauliflower and rice bowl. Usually I have that at home and I like it. This was at a restaurant and it was too oniony. I had cucumbers with that. Today for lunch I will have leftover pizza (I have a ton of leftover pizza in my freezer) with gluten free crust, mozzarella, basil and tomato slices. I looked at vegan cheeses this weekend, was kind of put off by them, I think I need to find time to make my own.

I like when the Brussels sprouts leaves get black and caramelized. So delicious! But these were just not fit to eat!

Today we had a new restaurant open in our community - it's a chain and it's not new to Nashville but it is new to our part of town. It's called Zoe's Kitchen and I LOVE it. Of course we went on the first day that they opened! I had a power grain bowl, which had quinoa, rice, farro and lentils. There was also a side of cucumbers and some taziiki sauce. So delicious!

Brussel sprouts are tricky! I often manage to burn them! It doesn't take long to go from awesome to awful!

I had some Brussels sprouts and cauliflower and I thought it might be getting old...wanted to use it before it went bad so last night I roasted it for my lunch today. Well, it smelled so bad that my husband was spraying air freshener and I could smell it in the wee hours of the morning. I opened the fridge this morning and I realized that people at work would be upset by the stench so I didn't bring it. I brought a Greek yogurt instead. That's a disappointment. I must have cooked the Brussels sprouts too hot or too long. Anyway, I also have blackberries and I pre-measured my walnuts and almonds today to keep myself from eating tons of them. Oh, and of course I have my chai latte! This week I have been using almond milk. I might go with coconut milk next week - I want to settle on one but don't love either one of them.

Lunch today is cottage cheese - I didn't have time to fix anything so just grabbed that out of the fridge. I have blackberries and my chai latte for snacks. Since the summer produce is dying off and local is becoming scarce I need to move on to the fall stuff. I love local produce and don't like imports. But I get stuck on certain foods and have a hard time moving on!

My chai was at home, thankfully DH worked from home that day so he put it in the fridge for me. I have my chai today - almond milk and chai. It's my mid-morning snack!

I've never had jack fruit.

I have dolmades today - grape leaves stuffed with rice. I've got some blackberries for my snack.

I hope you found your chai!!

Lunch Saturday was veggie curry with an amazing garlic naan. YUM. Yesterday I had a pulled jack fruit sandwich. Again, YUM. (Can you tell we ate out?)

Today's lunch is a bit eclectic...I have avocado and sauerkraut in eggroll wrappers, a small side of teriyaki soy curls and sliced bell peppers and a fruit salad. Odd combination, I know...

We go shopping tonight! That will mean meals that actually make sense!

Lunch today is the remaining zucchini with tomatoes and Parmesan. I've got continuing education today so I brought an Rx Bar in case I want a [healthy] snack and I have some blueberries today too. I just realized I left my chai in the car. Or at home...hmmmm

We have a team lunch today to say goodbye to our manager, who is not leaving the company but is leaving our team. We are going to a place called Taziki's, which is a small chain of restaurants that serves mostly Greek style food. I like going there because the food seems fresh and healthy - in fact, they are recognized for that, don't serve any fried stuff, use mostly whole foods and minimally processed and use as much locally sourced food as possible. I will have stuffed grape leaves (stuffed with rice) and a Greek salad.

I'll probably stop at the coffee shop on the way back for a treat.

Misshartung, that is a GIANT zucchini!

We have had a great crop of zucchini this year. I was out in the garden last night and found one that has been hiding on us for a while it is easily 16" long and 6-8" in diameter!!

Today's lunch is a cheese wrap with fruit salad, nut and raisins and pretzels for a snack again!

Wow, your lunch sounds great Misshartung!

My lunch is spiralized zucchini with tomatoes and Parmesan. Since I've been put on rest for a couple of weeks I've gained a couple of pounds so I need more veggies in my life and less almonds and walnuts, ha! Blueberries for a snack.

Curd rice and Garbanzo beans!

Indian standard Time!Now 54 yrs old.Had a Sleeve Gastrectomy and like most of us who have had this survey-it is a welcome surgery and ,howeer a radical lifestyle change-in diet,exercise,evrything.Weight is down by 20 kilos.That is a whole new me but I need to lose a couple of 5 more kilose hopefully due to newly diagnosed psoriatic arthritis.Well here's to all of us ,everybody!I am on a new challenge that
involves decorating the using SPARKPAGE DECORATING & VOTING CONTEST thread as shown.by

Pumpkin and quinoa, what a wonderful idea! Maybe I will do that with my leftover quinoa tomorrow. I can add some cinnamon and ginger to make it like pie!

I could go for the lentils too. I haven't had lentils lately.

Roasted sweet potatoes! Added some cinnamon and brown sugar for a special treat. I've had chai and some date rolls for my snacks.
